If I made chocolate chip cookies without the butter what would happen, what does the butter do?

Flavor, in two ways. First. there is the 'flavor' of the butter. Second, butter, and all fats, tend to remain in our mouths longer, making the flavors they carry also last longer and taste richer. This is why we like fatty foods.

Also, fats serve as an important binding and leavening agent in baked foods. Without them, the cookies would be hard (not crunchy... just hard). With the butter, or other fat, they are lighter, softer, and pliable.

If you are looking to 'cut the fat', there are some foods with similar properties. For example, some low fat recipes will call for apple sauce because it has similar binding and leavening properties to fats.

Butter adds flavor and also makes the cookie spread out . Shortening works, but has no flavor.Margarine is a good substitute, but pick one that is not too cheap and use sticks, never, softened.

I say Butter gives them flavor. I am sure Alton Brown would say something about the fat molecules binding with the starch molecules to create the cookie. Not sure what would happen, but I'm not sure I would want to taste them. If you try it, let us know how they turn out.

Butter makes the cookie rise and crispy. It makes it all golden and yummy lol

Butter adds flavor to your cookies,and nothing bad would happen if you left out the butter in your cookies,they would just taste less buttery than usual! ;-)

makes them more fattening! i always cut the butter in half when i make the traditional toll house recipe (1 stick in stead of 2) and they come out fine
