MARK’S MEATLOAF
1 ¾ lbs. 90% lean ground beef
2 eggs
2 oz. olive oil plus extra for cooking
6 oz. beef stock plus extra for drizzling
½ cup grated Parmesan or Romano cheese
½ cup plain bread crumbs
A hefty handful of chopped fresh parsley
Generous sprinkling of kosher salt and black pepper
Mix all of the ingredients in a bowl and place on an oiled sheet pan. Form a uniform rectangle 1 ½ - 1 ¾ inches in height. Place into a 350 degree oven. I remove it when the internal temperature has reached 140 degrees which is medium. Heat the remaining beef stock to a simmer and drizzle over slices of the meatloaf.

My kids beg me to make this meatloaf & any leftovers are gone the next day! If I'm out of crackers, I just use breadcrumbs, crushed chips, oatmeal - whatever I happen to have on hand. 2 1/3 cups coarsely crushed soda crackers (1 1/2 tubes from package) 2 pounds lean ground beef 1/2 pound ground sausage 1 large egg 2 medium onions, chopped 1 medium green bell pepper, minced 3/4 cup ketchup plus 1/4 cup for the top 1/3 cup Worcestershire sauce 1 teaspoon salt 1/2 teaspoon black pepper Preheat the oven to 325 F. In a heavy-duty, plastic food-storage bag, place the crackers, seal, and roll over with a rolling pin until crushed but not powdery. In a large bowl, with clean hands, mix together all the ingredients except the 1/4-cup ketchup for the top. Mix thoroughly but lightly, being careful not to pack the meat too much. Place in a 13 x 9 x 2 inch baking pan and shape into a loaf. Cover with aluminum foil. Bake for 45 minutes. Remove the foil. Spread the top of the loaf with the 1/4-cup ketchup. Bake, uncovered, another 60 minutes. Let stand for 10 minutes before slicing. Makes 10 Servings.

I like to make my meatloaf with a combination of ground beef and ground (unflavored) pork. Instead of most of the recipes, I use Quaker Oats as my binder...I leave out the egg. So anyway, I put my 1 1/2 to 2 lbs ground meat mixture in a bowl and add about 1/2 cup chopped onion and 1/3 cup chopped green pepper. Add 3/4 tsp. salt and some freshly ground black pepper. Add 3/4 cup quick oats and 4 to 6 ounces tomato sauce. Gently mix all of that together. Place into a 9 x 5 loaf dish. Pour balance of tomato sauce on the top and put a bay leaf on the center top. Bake at 350 F for about 1 1/4 to 1 1/2 hours. Pour off the fat into an empty container. Let sit for 5 minutes. Enjoy with potatoes, etc. Sometimes I make a separate brown gravy, but not with using the fat that comes off of the meatloaf...I'd use a jarred or packaged gravy instead of that pure fat - even though I make Yorkshire Pudding out of "good" beef fat!

BBQ Meatloaf
2 pounds lean ground beef
2 teaspoons salt
1/4 teaspoon ground black pepper
2 eggs
1/2 cup of crunched up Ritz Crackers
1 teaspoon Worcestershire sauce
1/2 teaspoon of parsley
1/4 teaspoon of oregano
1/4 teaspoon of garlic powder
3 slices of slab bacon.
a few dashes of a good hot pepper sauce
A good squirt of the BBQ sauce.
Mix all together (except bacon) in a bowl and don't be afraid to use your hands.
Make your loaf on a cookie sheet.. not in a baking dish. You can make a foil boat to avoid run off.
At least 1 1/2 - 2" high.
Layer the strips of bacon over the top of the loaf.
Cook in a 425 degree oven for 15-20 minutes.
Let rest and remove bacon. The meatloaf is not fully cooked yet.
thin Sweet Baby Rays Hot & Spicy BBQ Sauce with some good beer in a sauce pan. It should be runny.
Cut the loaf in 1 1/2" slices and immerse in the sauce, completely coating each piece.
Grill over medium high heat, getting good grill marks.
Baste and flip. 3-5 minutes per side.
We've made this three times and have yet to refrigerate leftovers.

Meatloaf: 1 pound of hamburger meat
1 onion chopped
1 egg
1 cup bread crumb
Sauce: 1 can tomato soup undiluted
1 tablespoon prepared mustard
1 tablespoon vinegar
Method: - mix meat with other three ingredients put aside
- in a separate bowl mix sauce
- put meat in a loaf pan and pour sauce over meat
- cook at 400 degrees four 1 hour until done

Meat Loaf
2 eggs, beaten
3/4 cup milk
2/3 cup fine dry bread crumbs or 2 cups soft bread crumbs
1/4 cup finely chopped onion
2 tablespoons snipped fresh parsley
1 teaspoon salt
1/2 teaspoon dried leaf sage, basil, or oregano, crushed
1/8 teaspoon black pepper
1-1/2 pounds lean ground beef, lamb, or pork
1/4 cup ketchup
2 tablespoons packed brown sugar
1 teaspoon dry mustard
hopefully this meat loaf recipe helps I usually serve it with these side dishes:
Lemon Zested Peas and Carrots
Cook carrots and peas, toss with a bit of butter and grated lemon zest (the yellow part of a lemon rind).
Mashed Potatoes
Plain mashed potatoes are sometimes just the right thing -- they're perfect with meat loaf.

1 pound meatloaf mix...ground round, veal and pork
1 onion, diced
1 green pepper, diced
garlic powder
salt
pepper
1.5 cups seasoned bread crumbs
1/2 can tomato paste
2 cans tomato soup plus 2 cans water
3 tablespoons dried parsley
1 egg
mix all but soup and water...form a loaf....put in roasting pan....mix soup and water pour over it and add the tomato paste that remains to top of loave.
bake at 350 for 1 hour and 200 for an hour.
Serve with mashed potatos and use gravy from pan for gravy.
remember to baste the loave every 30 minutes to keep it moist.
And you cook it covered in roasting pan.

Ingredients and Measures:

1/2 cup diced onion (or to taste)
1/2 cup salsa (or to taste)
1/4 cup mustard
1 egg
1 cup ground saltine crackers (or to proper consistency)
salt and pepper to taste
Mix all ingredients and form into a loaf. Cook in preheated oved at 350. Serve with garlic mashed potatoes, stir-fry fresh green beans/carrot slivers/water chestnuts in a bit of olive oil with seasonings of your choice and a toasted bread.
Dessert: fruits

I just make a regular meat loaf but add some salsa and cumin and taco seasoning and turn it into a mexican tasting meat loaf.

eggs, oatmeal (old fashioned) salsa...mild preferrably, you only want this for flavor. Sharp cheddar cheese. Top with sour cream when done. Sorry, I don't ever measure so you'll have to wingit.
