-there's a restaurant in town that does them. However, the cheese in theirs doesn't harden when it comes out of the oven. I tried it with mozz and the cheese hardened. Any ideas on a cheese that melts nicely and stays that way- i know it was a white cheese. TIA

Pepper Molds
Timballi di Peperoni

SERVES 4

4 large red sweet peppers, stem tops removed, peppers cut in half and seeded
2 cups ricotta cheese
2 large eggs
1/2 teaspoon fine sea salt
Pinch nutmeg
1/4 cup chopped basil
1/2 cup grated Parmigiano Reggiano cheese

Preheat the oven to 350F.

Place the pepper halves skin side up on a foil lined broiling pan and broil the peppers until the skin is black. Cool, then peel off the charred skin. This step can be done a day ahead of time.

In a bowl beat the ricotta cheese with the eggs, salt, and nutmeg until it is light and fluffy. Fold in the basil and cheese.

Brush 4 1/2-cup ramekins with olive oil. Line the ramekins with the peppers, leaving a 1-inch overhang. Fill the center with some of the filling and fold the overhang over the filling. It does not need to cover the cheese mixture completely.

Set the ramekins on a cookie sheet and bake them for 30 to 35 minutes. Run a butter knife around the inside edge of the mold and invert each ramekin onto a serving dish. Garnish with a basil leaf and serve.

Cheese- and Shrimp-Stuffed Roasted Poblanos with Red Bell Pepper Sauce

Instead of Panela, other soft white Mexican cheeses — such as Oaxaca, or those used for making quesadillas — work well in this recipe. If none is available, substitute Monterey Jack cheese. The stuffed chilies can be assembled one day before baking. What to drink: A Napa or New Zealand Sauvignon Blanc (or any dry but fruity white wine).

8 large poblano chilies* (each about 3 ounces)
8 ounces peeled deveined cooked shrimp, coarsely chopped
2/3 cup soft fresh goat cheese (about 4 ounces), room temperature
1/2 cup (packed) grated Panela cheese or Monterey Jack cheese
1/4 cup chopped red bell pepper
2 tablespoons chopped shallot
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh basil

Red Bell Pepper Sauce
Fresh basil leaves (optional)

preparation
Char poblano chilies over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel chilies. Using small sharp knife, carefully slit chilies open along 1 side. Remove seeds, leaving stems attached.
Mix shrimp and next 6 ingredients in medium bowl. Season to taste with salt and pepper. Fill chilies with shrimp mixture, dividing equally. Pull up sides of chilies to enclose filling. Place stuffed chilies on baking sheet. (Can be prepared 1 day ahead. Cover and refrigerate.)

Preheat oven to 350°F. Bake chilies uncovered until heated through and cheeses melt, about 15 minutes. Spoon 3 tablespoons Red Bell Pepper Sauce onto each of 8 plates. Place 1 stuffed chili atop sauce on each. Garnish with basil leaves, if desired, and serve.

* Fresh green chilies, also known as pasillas; available at Latin American markets and some supermarkets.

Makes 8 servings.

Well, you could always buy a few peppers and experiment with different cheeses. Some "white" cheeses: Monterey Jack, Swiss, Cotija, Queso Fresco, Brie, Havarti.

12 warm banana peppers, cored and seeded 2 (8 ounce) programs cream cheese a million (8 ounce) anchovies fnely chopped a million teaspoon worcestershire sauce a million/2 cup writer 1st baron verulam bits 8 oz. cheddar cheese, shredded 3/4 cup parmesan cheese a million cup overwhelmed saltine crackers combination all components different than parmesan and saltines and heavily stuff peppers (positioned on GLOVES while handleing peppers!). place peppers in gently greased casserole dish and good with parmesan and overwhelmed crackers. (I merely guessed at those quantities, good them as you like with greater of much less of each). place in oven at 350 and bake 40 minutes or till filling is warm.

Try monterey jack or asiago....these are much softer cheeses. They should work great. I have stuffed poblanos with these mixed with crab meat. It turned out great!

Colby or Monterey Jack Cheese, grated is what i use
