Rice With Chickpeas
6-8 servings 30 min 5 min prep
12 ounces canned chick-peas, drained
olive oil (for frying)
3 garlic cloves, finely chopped
1 1/3 cups short-grain brown rice
2 1/2 cups chicken stock or water
tomato sauce, for serving
chopped fresh herbs (to garnish)
Cover chickpeas with water and simmer 10-15 minutes or until just tender.
Meanwhile, prepare the rice. In a saucepan, heat 2 tablespoons of oil. Add garlic and fry 2 minutes. Stir in rice and stir-fry 3 to 4 minutes, then stir in 1-1/4 cups stock or water. Simmer 10 minutes, then add another 1-1/4 cups stock or water. Continue cooking 10 to 12 minutes or until liquid is absorbed and rice is tender.
Drain chickpeas. In a skillet, pour enough oil to just cover the bottom. Add chickpeas and fry, stirring frequently, until golden-brown. Remove chick peas with slotted spoon and stir into rice.
Serve topped with tomato sauce.

Here is a quick and easy soup recipe
Tomato Garbanzo Feta
1 small yellow onion
1 small red onion
2 Tbl minced garlic
1/4 cup dry parsley (or fresh)
1/2 cup white wine
2 Tbl oregano, 2 tsp salt
saute' this until the onions are done
Add: 1 can chick peas
1 can diced tomatoes
2 cups of water or broth (veg. or chix.)
Let this stew, doesn't take long though
Serve it up, top with feta cheese
simple and pretty tasty

(1) 6oz jar Bella Cucina Lemon Marinated Chickpeas
Small block of Feta Cheese
Mash up Chickpeas Layer all 3 ingredients in a oven safe dish and bake at 350 degrees for 10 minutes or until feta is a golden brown. It tastes delicious it's the only way I can eat chickpeas.

You will find it hard to believe that this recipe is fabulous, but chickpeas are the main ingredient in my brownies.
No flour brownies
_________________
1-1/2 c chocolate, melted (any kind YOU like)
2 cups canned chickpeas
4 eggs
1 cup brown sugar
1 Tablespoon powdered sugar
1 teaspoon baking powder
1 Tablespoon vanilla
Put all these ingredients in a food processor and to blend smooth then spoon into 9x9 pan. Bake 350 degrees for about 45 min. but check sooner since everyone's oven varies. These freeze well too for later sharing.

Yes! Have you ever been to Palomino? This salad is the BEST!
Palomino Chop Chop Salad
3 C. Julienne-sliced Romaine greens
1 T. Julienne-sliced fresh basil
2 T. Italian Provolone cheese, cut in ¼" cubes
1 medium tomato, chopped small
1 T. Garbanzo beans
2 T. Genoa salami
3 T. powdered Parmesan cheese
¼ C. Julienne-sliced smoked turkey breast
Tomato wedges for garnish
Freshly cracked pepper
Balsamic Vinegar Dressing
2 pasteurized egg yolks
¾ C. Balsamic vinegar
3 cloves finely minced garlic
¾ tsp. Kosher salt
¼ tsp. black pepper
2 C. Olive Oil
Make dressing in a mixing bowl. Whisk egg yolks for 2-3 minutes, then add vinegar, garlic, salt and pepper. Whisk 2-3 minutes. Slowly add oil to emulsify. Refrigerate until needed.
Combine greens, basil provolone, garbanzos, salami in a bowl; add ½ C. dressing. Toss to combine. Add parmesan and toss.
Place salad on plate; top with turkey and tomato. Serve with pepper mill. The restaurant offers this as 1 large serving but it easily feeds 2.

I love garbanzo beans! Here is a recipe that I make for my family. Hearty but, low in fat because yo u use turkey kielbasa.
1 package of turkey kielbasa slice in rounds
3 tablespoons of olive oil
1 onion chopped
3 cloves of garlic minced
1 16oz can garbanzo beans drained
1 16oz can diced stewed tomatoes with juice
1 8oz can tomato sauce
2 tsp fresh chopped rosemary
2 tsp fresh chopped thyme
1/2 cup chicken stock
Heat olive oil on medium high heat add kielbasa brown on both sides and remove pan and set aside. In same pan saute' onions
until soft and garlic saute for another minute adding a pinch of salt and pepper. Add garbanzo beans, tomatoes, tomato sauce,rosemary,thyme and chicken stock. Simmer 5 minutes add back kielbasa and simmer another minute to heat thru.
Serve with mashed potatoes and a green salad.

I like them in a bean salad, combined with other beans.
I usually use red kidney, & black beans, for colour.
Marinate with an oil & vinegar dressing like Italian.
They also make a lovely soup, boiled in chicken stock.
Add diced celery & carrot, & puree when cooked through.
TWO BEAN DIP
Combine 19 oz cans of chickpeas & white kidney beas,
with 1/2 cup lemon juice, 1 tbsp olive oil, 3 garlic cloves.
4 drops of red pepper sauce, & 1/2 tsp salt.
Process in 2 batches, in blender or food processor.
Scrape sides, until smooth, transfer to medium bowl.
Garnish with parsley, serve with crackers or veggies.

There are plenty of fresh hummus brands in the supermarket. I know that the main ingredient are chick peas and then you add what you want. I love scallion hummus. I would google "recipe for hummus". Hummus is mostly used on pita bread.

I use them as a side dish with some olive oil, balsamic vinegar, fresh basil or oregano and some of those baco's. I eat it chilled sounds weird but I like it!!! Also falafel is great, they make a great addition to soups as well...

Drain em real good, mash em up with a potato masher, add salt and pepper and just enough mayo to hold it al together. Spread it on bread to make a lo-cal, hi fibre tasty sandwich.
