I'm looking for some Indian recipes. I'd appreciate if you could either give me your favourite recipe, or the links to your favourite sites, especially if you've tried some of their recipes.

I'm especially interested in main course, curries to serve with rice or parathas.

Warm Indian Rice Pudding Recipe

1 cup short grain Indian or Italian (Arborio) rice
1 1/2 cups water
2 to 3 cups milk
1/2 cup sugar, or to taste
1/4 cup golden raisins
1/4 cup raw cashews or shelled pistachios, chopped fine
Seeds from 4 cardamom pods
Ground cinnamon to taste

In a saucepan combine the rice and water, bring to a boil, stirring, and simmer, stirring occasionally, for 15 minutes. Add 2 cups of the milk, the sugar, raisins, cashews or pistachios, cardamom seeds, and cinnamon, and simmer, stirring often, for 10 to 15 minutes more, or until rice is tender and mixture creamy. Add additional milk if necessary. Pudding may also be served chilled.

Indian Hot Curried Mangos with Tofu

1 tablespoon sesame oil
5 cloves garlic, minced
1 tablespoon minced ginger
1 firm mango, peeled and sliced
3 tablespoons yellow curry powder
2 tablespoons chopped cilantro
1 (14 ounce) can light coconut milk
1 (14 ounce) package extra firm tofu, cubed
1/4 teaspoon salt and pepper to taste

Heat the sesame oil in a large pan over medium-high heat. Cook the garlic and ginger until fragrant and light brown, about 1 to 2 minutes. Add the mango and cook for another minute to soften slightly. Stir in the curry powder and cilantro; cook for another minute to release the flavor of the curry.
Pour in the coconut milk and bring to a simmer. Stir in the tofu and season to taste with salt and pepper. Simmer until the liquid is reduced by half, stirring occasionally, about 5 minutes.

Bunjal Chicken [6 servings]

1 (2 to 3 pound) whole chicken
1/2 teaspoon salt
2 tablespoons olive oil
1 onion, thinly sliced
1/4 teaspoon ground black pepper
1 tablespoon crushed garlic
1/2 tablespoon tomato paste
1/2 teaspoon garam masala
1 teaspoon curry powder
1/4 teaspoon celery salt
1/4 teaspoon salt
1/4 cup water

Preheat oven to 350 degrees F (175 degrees C). Place the chicken into a 2 quart covered baking dish or dutch oven with 1/2 teaspoon of salt and olive oil.
Bake in the preheated oven for 40 minutes or until chicken is cooked through and appears brown. Add the onion, pepper, garlic, tomato paste, garam masala, curry powder, seasoning to taste and 1/4 teaspoon salt. Mix all together, then add 1/4 cup water for the ingredients to steam.
Return to the oven for 5 more minutes to blend all the flavors. Serve over rice or eat plain.

Butter Chicken is my fav. It is so easy to make and you serve it over Basmati rice. You can scoop up the sauce with the Parathas. yummmmm Serve it with cup of Chai also.

Butter Chicken (Makhan Murg)

4 chicken breasts, skinned
1 large onion, finely chopped
3 Tbsp Butter
2 tsp garlic, crushed
1 tsp ginger, grated
1 tsp green chili peppers, finely chopped
1/2 tsp paprika
1 Tbsp curry powder
1 cup tomatoes sauce
1 tsp salt, or to taste
1 cup whipping cream, or half and half
1 Tbsp cilantro, finely chopped (optional)

Cut chicken into bite size pieces. In saucepan, fry onions in
butter till golden brown. Add garlic, ginger, chili peppers,
paprika and curry powder.

Fry for a few seconds. Add tomato sauce, salt and chicken,
slowly bringing to a boil. Reduce heat, simmering until chicken
is nearly done, about 15 to 20 min.

Add whipping cream, stir and simmer until chicken is tender.
Garnish with the cilantro.

Serves: 3 to 4

NOTE: You can use any chicken meat you like. I have made it
with chicken thighs and legs. I removed the skin and left it with
the bone in.

Chai

Boil 5 minutes:

1 Tbsp fennel or anise seed
6 green cardamom pods
12 cloves
1 cinnamon stick
1/4" ginger root, sliced thin
1/4 tsp black pepper corns
2 bay leaves
7 Cups water

Add, and steep 5 minutes:

2 Tbsp Darjeeling tea {Black Tea}

Add:

6 Tbsp brown sugar
1 Cup Half and Half or milk what ever you prefer.

It's more of a snack ..PAKORA..i really like cos it s easy to make and tastes good..
I normaly serve it with chutney and tamarind sauce it s yummo
