Maple Nut Fudge

1 1/2 cups real maple syrup
1 3/4 cups sugar
2/3 cup heavy cream or 1 (5 ounce) can evaporated milk
1/4 teaspoon salt
1/4 cup unsalted butter
1 teaspoon vanilla extract
1 cup chopped walnuts
Line an 8 inch square pan with nonstick foil and spray with cooking spray.
Combine syrup, sugar, heavy cream and salt in a medium saucepan, preferably a non stick one; bring to boiling over medium high heat, stirring constantly; once boiling, cook 7 to 8 minutes or until mixture registers 238 degrees f. on a candy thermometer.
Remove pan from heat; with an electric mixer, beat in butter and vanilla.
Continue to beat on high power for 8 to 9 minutes, or until thickened, light ion color and fudge loses its glossy finish; stir in nuts and spread in prepared pan; let stand until firm about 25 minutes then cut into squares.
Prizewinning Maple Fudge

1 1/3 cups eagle brand sweetened condensed milk
1 cup pure maple syrup
1 cup brown sugar
1/4 teaspoon salt
1 tablespoon butter
1/2 cup nuts, chopped (optional)
Combine all ingredients in a medium saucepan except nuts. Simmer slowly, stirring until sugar dissolves. Continue cooking mixture, stirring occasionally until it reaches soft ball stage or a temperature of 236°F.
Cool without stirring to a temperature of 110°F or until mixture feels warm.
Beat until thick, add nuts and pour into buttered pie pan. Allow to set.
Maple Nut Fudge Recipe
INGREDIENTS:
2 cups Fancy or Grade A Medium Amber Pure Vermont Maple Syrup
1/2 cup chopped nuts
1 Tablespoon butter
PREPARATION:
Boil syrup to 236 degrees. Remove from heat and place in a pan of cold water. Cool to room temperature. Stir vigorously until color begins to change, then add nuts. Pour into well-buttered 8" or 10" square pan. Cut fudge into squares while warm.
Country Maple Fudge

1 cup real maple syrup
1 cup brown sugar, packed
1/4 tsp. salt
1 Tbls. butter or margarine
1/2 cup chopped nuts, optional
Place all ingredients, except nuts, in a medium sauce pan.
Simmer slowly over medium heat until the sugar dissolves. Continue cooking the mixture until it reaches the soft ball stage (236 degrees). Cool, without stirring, until it reaches 110 degrees or is just warm to the touch.
Beat until it thickens and then add the nuts, if desired. Turn out into a greased pan and cool completely.
Refrigerate for approximately one hour, remove and cut into squares.
Store in fridge or a cool place.
Walnut Maple Fudge Recipe
Ingredients:
2 cups sugar
1 cup evaporated milk
3 tablespoons butter
3 cups miniature marshmallows
3 cups white chocolate chips
1 cup chopped walnuts
2 1/2 teaspoons maple flavored extract
50 walnut halves
Directions:
In a medium saucepan over medium heat, combine sugar, evaporated milk and butter. Bring to a boil and let roll 5 minutes. Remove from heat and quickly stir in marshmallows, white chocolate, chopped walnuts and maple flavoring. Spread in a 9x13 inch dish. Top with large walnut pieces, evenly spaced. Chill 8 hours or overnight. To serve, cut around large walnuts.
serves/makes 3 lbs

2-½ cups maple sugar
1 cup milk
½ cup boiling water
1 cup broken nut meats
Instructions
Break the maple sugar into small pieces and heat it in a saucepan with the water.
When it is dissolved, add the milk.
Boil to the soft ball stage, or 2368 degrees F.
Remove from the fire and cool.
When it is lukewarm, beat until it creams and add the nut meats.
Spread it in a buttered pan and when it hardens mark it into squares.

Here is a recipe for maple fudge. Hope you like it. Ingredients: 2 cups maple syrup 1 tablespoon light corn syrup 3/4 cup light cream 1 teaspoon vanilla extract 3/4 cup chopped walnuts Directions: Butter an 8x8 inch dish. In a medium saucepan over medium heat, combine maple syrup, corn syrup and cream. Bring to a boil, stirring constantly. Then heat without stirring to between 234 and 240degrees F, or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and let cool until lukewarm. Beat mixture until it thickens and loses its gloss. Quickly fold in vanilla and nuts and spread in prepared pan. Let cool completely before cutting.

Mix together and stir:
1 cup sugar
1 cup brown sugar
2 teaspoons vinegar
1/2 cup maple syrup
1/2 cup water
Place over medium heat and boil slowly, washing down sides of pan often. Cover with lid for one minute. Cook to 228°F. Cool in pan.
When cool, beat until it loses it's gloss and becomes fudge like. Add maple flavoring to taste, if desired, and 1/2 cup chopped nuts.
Pour into a buttered 8 inch square pan. Allow to cool until set.

2 CUPS MAPLE SYRUP

1 BUTTERED 9 X 13 CAKE PAN
COOK SUGAR, SYRUP AND HEAVY CREAM UNTIL IT MAKES
A HARD BALL ( 236 degrees), ABOUT 40 MINUTES.
ADD VANILLA AND LET COOL SLIGHTLY, THEN STIR UNTIL IT STARTS TO THICKEN, ADD NUTS AND PUT INTO PAN. THIS THICKENS REALLY FAST WHEN YOU ADD THE NUTS SO DON'T WAIT TOO LONG.
