im making snickerdoodles and i have a really good recipe (i made it at friend's once) heres the recipe:

SNICKERDOODLES

1/2 c. soft shortening (part butter)
3/4 c. sugar
1 egg
1 1/3 c. sifted flour
1 tsp. cream of tartar
1/2 tsp. soda
1/8 tsp. salt

anyways, i dont have cream of tartar and i cant go to the store to get any. i saw some other ppl have asked the same question and it says that instead of using baking soda and cream of tartar, u can use baking powder. unfortunately i dont have that either. wat should i do? can i just use baking soda and no cream of tartar? or no?

how big would it have to be for this recipede (i spelled that so wrong) lol

Gumbo:
1 cup finely chopped onion
1 cup finely chopped celery
2 tablespoons olive oil
2 bay leaves
1/2 teaspoon dried thyme
1 teaspoon lemon-pepper seasoning
1 1/2 teaspoons House Seasoning, recipe follows
1 cup chicken or fish stock
1 (14 1/2-ounce) can diced tomatoes
10-ounce package frozen cut okra
2 cups shrimp, cleaned, peeled, and deveined
Topping:
1 egg, beaten
1/3 cup milk
12-ounce package corn muffin mix


In an iron skillet, saute onion and celery in oil. Add bay leaves, thyme, lemon-pepper seasoning and House Seasoning. Pour in stock and add tomatoes and okra. Cover pot and gently simmer for 30 minutes. Remove from heat and stir in shrimp.
To prepare the topping, preheat oven to 400 degrees F. Mix together egg and milk, add to muffin mix, and combine until just well-blended. Drop by tablespoonfuls on top of hot shrimp mixture, leaving the center uncovered. Bake

I would like to know what white cheeses melt best for a cream cheese sauce. Feta, Goat, mascapone, monterey jack? What? I make a shrimp pasta that needs a creamy white cheese sauce. I live in Egypt and dont know what some of the cheeses are..(haha) that I am buying, but they arent working. I can buy any cheese from Dubai and take it home, so please advise. I just got one of those parm. cheese dispensers for one of our wedding gifts, and if I shred the cheese myself (in the food processor) how long should it last in a cheese dispenser with no cover (it's one of those one's that are used in pizza restaurants if you know what I mean).

I just don't want to fill it and find that the cheese goes back in a few days!
