They didn't make food processors for home use whenI started cooking, so it might take a little more time but our older ways of doing things can be as good or even better!
For pesto, it's really just a matter of chopping/dicing the basil and pinenuts very fine. Then drizzle in the oil and other seasonings while using a whisk.

you can use a blender, just small amounts at a time, or it takes time but if you use two chef knives, and pretend you are playing the drums, and start chopping away
