When we have crab or lobster, we save the shells and I make a stock out of it, then that turns into a bisque. (All that money for seafood, it's not going to waste!)

And when we have veal picatta, any leftovers I save and make a garlic alfredo with mushrooms, and add sliced veal strips. (Same thing, can't let expensive stuff go!)

When we have leftover pasta in a red sauce, I put it in a pan and cover with cheeses and black olives and bake it.

Leftover mashed potatoes get a little extra sour cream, spread in a pan, and topped with cheese and baked. Then green onions on top.

Leftover black beans and rice makes an excellent quesadilla filling.

Yes and I did for the turkey on Thanksgiving dinner. It's better you prepare a bit more food than you running short of food.
(1) The white meat (breast) will be great for sandwish or salad. They were well seasoned, just add salad dressing source and some green veg leaf and you going to have great meal or snack.
(2) The wings and drum stick will be great to add into any kind of soup.
(3) The bones and the rack (The neck that come with the bird too). Add some carrots and celery with some spices, it can turn to the "chicken stock" replacement for any of your dish.

Well, just be creative. After all, they were left over.
