Yorkshire Parkin

1 tsp. baking powder or baking soda
3 tsp. ground ginger
2 c. plain flour
1 c. brown sugar
1 c. molasses (Grandma's)
4 oz. butter
1 lg. egg
1 c. milk

Sift the flour, baking powder and ginger together, then add the oatmeal. Put the molasses, butter and sugar into a saucepan; melt together slowly. Beat the egg with the milk. Add the molasses mixture to the flour mixture and beat well together. Finally add the egg and mix.
Mix thoroughly and pour into a deep rectangular cake tin (10 x 6 x 3 inches deep) which has been lined with waxed paper and well greased. The mixture should be very soft before cooking in a 325 degree oven for 30 minutes then at 300 degrees for another 30 minutes. Test with a skewer in the center before removing from the oven. Make parkin a few days before eating it as it has a sticky texture and it is easier to cut into squares.

Ingredients
oil, for greasing
225g self-raising flour
1 tsp ground ginger
1 tsp Bicarbonate of soda
1 egg, lightly beaten
115g caster sugar
60g Butter
115g golden syrup
225ml Milk, milk

Method
1. Preheat the oven to 150°C/gas 2.

2. Grease a 25 x 18cm cake tin and line with greased greaseproof paper.

3. Sift the flour, ginger and bicarbonate of soda into a bowl. Stir in the egg and then the caster sugar, mixing well.

4. In a small saucepan, melt the butter and the golden syrup, stirring to mix. Remove from the heat and stir in the milk.

5. Gradually stir the milk mixture into the flour and egg mixture. Stir until smooth, then pour into the prepared tin.

6. Bake for about 1 hour or until the mixture starts to shrink away from the sides of the tin.

7. Remove from the oven and turn out onto a wire rack to cool.

8. Cut into squares and serve, preferably after about 3 to 4 days when the parkin will have become nice and sticky.

Oatmeal Parkin.

225g (8oz) plain flour
10ml(2level tsps) baking powder
20ml(4 level tsps) ground ginger
100g (4oz) lard or margarine
225g ( 8oz) medium oatmeal
100g (4oz ) castor sugar
175g ( 6oz) golden syrup
175g (6oz) black treacle
1 egg beaten
60mls (4tbsps) milk

Grease and line a 23-cm (9-in) square tin or shallow meat tin.
Sift together the flour,baking powder and ginger. Rub in the fat and add the oatmeal and sugar.
Heat the syrup and treacle over a very low heat: do not over heat.
Make a well in the centre of the dry ingredients and gradually stir in the liquid from the saucepan and the beaten eggs and milk.
Pour into the tin and bake in the oven at 180oc (350f) or mark 4 for 3/4 hour-hour. Allow to cool a little in the tin, then turn out to finish cooling. Serve cut into squares or fingers. Keep for about 1 week before eating in an airtight tin.

2. Sieve the flour, sugar, ginger and bicarbonate of soda into a large bowl.
3. In a small pan gently heat the butter and syrup until melted.
4. Beat the egg into the milk.
5. Gradually pour the butter and syrup into the flour and stir. The mixture will be thick.
6. Pour in the egg and milk and stir until smooth and pour into the lined tin.
7. Bake for 1 hour

Ingredients

pinch salt

some milk

Sift flour, ginger and bi carb into mixing bowl add oatmeal.
Melt treacle, butter and sugar in a small pan do not boil.
Pour over the dry ingredients stir add the egg stir add enough milk to make soft.
Pour into 6" square tin, bake for about 1hour at gas mk3
