I would like to know what white cheeses melt best for a cream cheese sauce. Feta, Goat, mascapone, monterey jack? What? I make a shrimp pasta that needs a creamy white cheese sauce. I live in Egypt and dont know what some of the cheeses are..(haha) that I am buying, but they arent working. I can buy any cheese from Dubai and take it home, so please advise. Also name any others besides chedder that will work. Gouda? Brie? Thanks.

You can use parmesan, asiago, mozzarella, gruyère, swiss, baby swiss, havarti, pretty much anything. You just have to grate it finely and sprinkle it in a little at a time and let it melt in over medium-low heat after you have the cream sauce made. Keep stirring until well combined. Good luck!

It depends on the taste you're aiming for. Personally, I prefer the sauce not to overwhelm the taste of the shrimp, which is fairly delicate. Some of the cheeses you mention are just too strong for a shrimp pasta dish. I'd use Swiss...Gruyere to be exact.

I love marscapone. It is like cream cheese but without the tang. It doesn't have a cheesy taste or texture. When melted, it's more like a thick butter sauce.

I use it for pasta a lot for a creamy taste.

the swiss sounds good tome [mabe with a few crumbs of blue cheese sprinkled on top after it is on the plate and ready to be served] just a little or the shrimp will be lost, this also works well on beef.
