This is my all-time favorite new recipe. I got it from allrecipes.com when I was looking for something new to make when company was coming. This is the most fabulous thing I have ever made!
Spinach Tomato Totellini
(16 ounce) package cheese tortellini
1 (14.5 ounce) can diced tomatoes with garlic and onion
1 cup chopped fresh spinach
1/2 teaspoon salt
1/4 teaspoon pepper
2 T. fresh chopped basil
1 teaspoon minced garlic
2 tablespoons all-purpose flour
3/4 cup milk
3/4 cup heavy cream
1/4 cup grated Parmesan cheese
Bring a large pot of water to a boil. Add the tortellini, and cook until tender, about 10 minutes or according to package directions..
While you get the tortellini going, combine the tomatoes, spinach, salt, pepper, basil and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
In a medium bowl, whisk together the flour, milk and cream. Stir this mixture into the saucepan along with the Parmesan cheese. Heat through, then reduce heat to low, and simmer until thick, about 2 minutes.
Drain the tortellini, but do not rinse, then pour them into the saucepan with the sauce. Stir to coat, and serve.
Sometimes I saute a couple of chicken breasts in olive oil with garlic, rosemary and basil and chop it up to toss in. WOW!
Hope you like it!

If you want to make whoever it is your feeding fall deeply in love with you try this....If you don't like this person, for Gods sake, don't feed this to them cuz they won't go away...
I call it Beaufort stew.. others call it low-country boil, or whatever..
cut un-peeled red potatoes into quarters and place in a dutch oven or deep pot filled with water on the stove, on high..
Season this water with Old Bay Seasoning, sold in your market somewhere near the fish counter.
If you live in the south, buy you some Lumberjack ( hot ) sausage links. ( or hillshire farm ) will work in a pinch, for all of us that unfortunately live in like Iowa or Minneapolis or some other godawful place that doesn't have fresh seafood..
add the sausage and boil for about twenty minutes. Hey!! Don't scrimp on the Old Bay eigther. You can't possibly use too much..
when the potatoes and sausages are fully cooked, add corn on the cob and boil another 7 minutes...
After the corn on the cob has been boiling for about 4 minutes, add 1 lb. of un-peeled shrimp. ( 50 to 60 count is best in my opinion. ) when they are pink they're done and it don't take too long to get that way...
Now again, if you don't like the people who are eating, DON'T let them eat any of this. Give em a hot-dog or something else...
OH ! and don't give out napkins eighther cuz you'll want to just lick your fingers.

Best of all, Hormel, Armour, Tyson and other brands have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Most all come with gravy. They are very good and I serve them often. Use this for your meat dish and add vegetables, rice, or potatoes and gravy. You will find these packages near the meat section, they are not frozen. If you are only cooking for yourself, you can make two or more meals out of one package and freeze them for future dinners or lunches.
Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy, a vegetable, cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked.
