I make a meatloaf that my family just loves...my kids beg for it. But I don't have a recipe I just know what goes in it but every so often I end up with a mushy meatloaf that does not harden right...I am guessing that because I don't follow a recipe I am adding to much or to little of something to it. Any ideas why?

Okay- so I am not a great cook at all and I seriously need advice. I had a recepie that required using Ginger so, I went to the store and searched everywhere and could not find it. In our family we eat no BEEF or PORK products. Our Diet consists of Fish, Chicken and Turkey. Ofcourse veges and other stuff. But How do i keep it interesting? My Boyfriend is 1/2 Puerto Rican 1/2 Sicilian. Me, i'm French Jamaican and the way we cook is a lot different from most people. Now that my boyfriend and I are living togather after 6 yrs, i need some new ideas to keep our meals fresh and exciting. He doesnt like spicey foods and i do. Any help I can get would be great. TODAY. or point me in the right direction. A website with good receipies or a book that i can pick up. TODAY people. Please.
