I opened a fresh cocunut and need help in releasing the meat so I can use the coconut for a pie.

Using a big (flat topped) blunt knife, slice through the meat from one end to the other making sure the tip of your knife touch the shell while slicing. Then gently slide the knife between the hard shell and the meat. Apply force if necessary then it should be easy to lift the meat out. Cut it into smaller pieces then put it through a blender. Just buy a dissecated coconuts from the supermarket, it is much easier.

Blunt knives work well but there is a tool out there specifically for this task - a jipayana. You'll find them at most cooking/speciality stores - I've even found them in my local supermarket with cooking and bakeware items. Before using the jipayana (I won't go into details on how to use them - instructions are included), make sure you gently tap the coconut with a hammer (or similar item) on all sides - this will ensure even cracking when using the jipayana.
