how long would you cook deer for if it was over a spit (cut in pieces 5 inches all round (height length width) )

You can cook venison the same way you would beef. It can be like a roast, chopped (ground) in chunks for stew or cut into steaks and grilled. You can marinate it to get rid of some of the gamey taste - milk is especially good for this. We like to take the backstraps and slather with BBQ sauce then cook over the grill (open fire is better yet) turning and basting with more sauce until done. Another favorite is to take a roast and cook in a cast iron or dutch oven with onion, potatoes and diced or stewed tomatoes. Make a gravy from the sauce when done and serve over the meat and potatoes. Make sure you cook the meat clean through though - rare is not a good option for venison but over-cooking leaves you with tough dried out meat that isn't very good.
I know this doesn't really answer your question but it is hard to say a time - use beef as a guideline but keep the venison moist so it is not dried out and tough at the end of cooking.

Cook it as you would beef. You can also mince it and use as you would ground beef or use it in 2" cubes for stew. Some people like to mix in some pork with it to make it moister because deer is very lean and a burger patty won't hold together as well. I would cook it medium to well. I wouldn't do it rare or medium-rare.
