my mother in law just sent me this. says it is awesome but i haven't tried it yet

2 cucumbers diced
1/2 yellow onion diced
1 mango diced
1 cup watermelon diced
1 handful cilantro chopped finely
1 lemon squeezed
1/4 teaspoon garlic salt
1/2 yellow bell pepper diced
1 red tomato diced

put in a bowl and refridgerate a couple of hours it makes its own juice.

I have always liked to make a nice impression and use a glass bowl to layer my fruit salad in. Use whatever you like and what looks good at the market, try to alternate colors. I then drizzle a splash of Cointreau or Triple Sec (use OJ if you are serving kids) over it and top it off with some toasted slivered almonds.

And for a green salad with a creamy strawberry dressing try this recipe, it's really good and different:

Strawberry Romaine Salad

1 head of lettuce (preferably Romaine)
1 red onion, sliced thin
1/2 cup mayo
2 Tablespoons white vinegar
1/4 cup sugar
1/3 cup milk
1 pint strawberries, sliced

Wash lettuce, and dry. Break into pieces and toss with onion.
Whisk together mayo, vinegar, sugar and milk.
Just before serving, add berries to dressing and pour over salad.

Ambrosia Fruit Salad Recipe
INGREDIENTS:
• 1 cup mixed fruit chunks or fruit cocktail, drained
• 1/2 cup Mandarin orange sections
• 1/2 cup pineapple tidbits
• 1/2 cup miniature marshmallows
• 3/4 cup sour cream, or as desired
• 1/4 cup maraschino cherries, halved
• 1/4 cup red seedless grapes
• lettuce leaves
PREPARATION:
Drain fruits well. Combine all ingredients except lettuce, mixing gently but thoroughly. Chill.
Serve on lettuce leaves.

YOU CAN NOT make a mistake or fail with a Ambrosia fruit salad!!!!
Variations: instead of ¼ cup of red seedless grapes - use1/8 cup red and green grapes.
Instead of the pineapple and oranges – use canned fruit salad.

Prepare your favourite fruits or whatever you have in the house and dress with juice of half to one lemon with 1 - 2 table spoons runny hunny. Do not worry if you do not have runny hunny. Mix with lemon juice and pop in the microwave for 30 secs to melt it down. Toss with the fruit gently and serve. Try some whipped cream or if you are feeling virtuous then you could add some yoghurt. Simple.

This is an easy and quick recipe.

1. Cut up whatever fresh fruit you want in it
2. Add some coconut and chopped walnuts
3. Mix with "lite" whipped cream

1, 2, 3, there you have it. Very Yummy!

INGREDIENTS
2 cups diced apples
1 cup sliced banana
1 cup sliced fresh strawberries
1 cup chopped walnuts
1 cup vanilla yogurt
3/4 teaspoon ground cinnamon

DIRECTIONS
In a bowl, mix the apples, banana, strawberries, and walnuts. Fold in the yogurt. Sprinkle with cinnamon. Gently stir just before serving.

Try something a bit different ... use fresh blueberries, raspberries, sliced strawberries, cantaloupe balls and watermelon balls ... mix them in a little white wine with sugar added. You can put a 'dollop' of whipped cream on the top, you can 'drain' the fruit, or you can serve it with the 'juice' (kids won't get enough alcohol to get drunk) ... YUM!

anytypes of fruits, cut and into a bowl. if you just want the fruit, leave it just like that. otherwise if you want it a little juicier, add some of that "nectar" fruit juice that you can buy in a can at any grocery store. it looks like a can of soda, but it's a fruit juice. buy a can that has the same flavors of your fruit.

kiwi, strawberry, apples, bananas, and those little marshmallows, and grapes with a Little splash of lemon juice to stop the fruit from browning.

you can also take a bowl of spinach leaves and put a bunch of strawberries and all of the juice in it with walnuts. trust me the strawberry flavor make the bitterness of the spinach Disappear. it tastes soo good.

Easy Fruit Salad

4¼ hours 10 min prep

1 box frozen strawberries (thawed)
1 can peach pie filling
1 can pineapple chunks
1 can mandarin orange segments
1-2 banana


1. Mix all ingredients except bananas and chill.
2. Add bananas when ready to serve.


********Strawberry Salad

INGREDIENTS:

* 1 bunch of romaine lettuce (washed, tough ends removed, coarsely cut)
* 1 pint fresh strawberries(washed, stemmed & halved)
* 1/2 medium red onion
* sugared almonds, below
* .
* Sugared Almonds:
* 1/2 cup slivered almonds
* 2 tablespoons butter
* 1/3 cup granulated sugar
* .
* Dressing:
* 3/4 cup light mayonnaise
* 1/4 cup milk
* 2 tbsp poppy seeds
* 2 tbsp raspberry vinegar
* 1/3 cup granulated sugar

PREPARATION:
Sugared Almonds: In a saucepan over medium heat, melt 2 tablespoons butter; stir in almonds and 1/3 cup sugar. Sauté until golden brown.

In salad bowl combine lettuce, strawberries, onion, and the sugared almonds. Mix dressing ingredients together in a small mixing bowl and then toss with salad.
Chill briefly and serve.

****************Cranberry Salad

INGREDIENTS:

* 1 pkg (6 oz.) cherry flavored gelatin
* 2 cups hot water
* 1 lb. can whole cranberry sauce
* 1 lb. can jellied cranberry sauce
* 1/4 cup lemon juice
* 8 ounces cream cheese
* 2 cups whipped cream or whipped topping
* 1/2 cup chopped walnuts or pecans

PREPARATION:
Disolve gelatin in water. Add cranberry sauces and lemon juice. Pour into a lightly oiled cake pan. Chill until firm. Blend together softened cream cheese, whipped cream and nuts. Spread on top of gelatin. Refrigerate overnight or for several hours before serving.

***********Delightful Fruit Salad

INGREDIENTS:

* 2 cups tart apples, diced
* 1 cup seedless grapes, green
* 1/2 cup Mandarin orange sections
* 1 cup miniature marshmallows
* 1/2 cup pecans
* 2 teaspoons lemon juice
* 1 cup whipped cream
* 1/4 cup sugar

PREPARATION:
Coat apples with lemon juice; mix in grapes, orange sections, marshmallows, and nuts. Combine sugar and whipped cream. Mix thoroughly. Fold fruit into cream. Serve immediately or chill.
Serves 6.

***************Overnight Fruit Salad

INGREDIENTS:

* 3 Tbsp. chopped crystallized ginger
* 2 Tbsp. lemon juice
* 1/4 cup honey
* 2 cups cubed cantaloupe
* 2 cups cubed honeydew melon
* 3 cups cubed fresh pineapple pieces
* 4 cups sliced strawberries
* 1 cup raspberries

PREPARATION:
In large bowl, combine ginger, lemon juice and honey and whisk to blend. Add cantaloupe, honeydew melon and pineapple and mix gently. Cover and refrigerate at least 8 hours or overnight, stirring once.
Just before serving, stir in strawberries; sprinkle with raspberries and serve. Serves 20
