Peanut butter and jelly (or honey) sandwhich with banana and a glass of milk will cover all the food groups. You can have soup with it or Ramen noodles. Tuna salad sandwiches, drain the tuna, add mayo or miracle whip, sweet or dill pickle relish, just a spot of yellow mustard (takes away the fishy taste). You can add sliced tomato, and a leaf or two of lettuce on the side or chop the tomato and tear up the lettuce and mix in with the tuna. Glass of milk and you have a meal. Grilled cheese with a twist, add a piece of luch meat before grilling. Serve with tomato soup (or any soup) and a glass of milk. Hot dogs are cooked in processing so they can be served cold or cover and heat in microwave 10-15 SECONDS. Glass of milk and piece of fruit on the side. You can make mac&cheese if they have it. Cut up hot dogs right into the mac & Cheese for a little meat flavor. (If cutting hot dogs for kids under 7 years old, cut longway first then across. This will prevent a choking hazzard)

"grilled" cheese sandwiches - if they have a toaster oven then just slice some cheese, put it on the bread and throw it in the toaster - done!, apple slices, milk
pb&j's are a good idea, but sometimes older kids get bored with them, your best bet is to add a fruit to it, sliced banana or apple go over well, if the kids are more adventurous (and it's available) pineapple usually does well too
depending on how old the kids are, they will often be interested in helping - let them! less work for you! they'll also have some really good ideas (that they will eat), so ask.
just remember that you want to make sure they are getting a fruit and/or a veggetable at lunch and try to keep the transfat low. milk is always the preferred lunch drink (if they don't drink milk like my son does - all day long). try to stay away from sugary juices, if that's all that's available, you may want to mention to the parents how much sugar the juice has.

There are alot of great ideas here already, but here's a few more:
Fresh fruit is always good. Cut it up and make a quick dip out of chocolate syrup and fruit yogurt. Kids love to dip.
Sliced cheese with crackers.
English muffin pizzas - top muffin with store bought pizza sauce, shred on cheese and heat in the toaster oven. Kids can even add their own extras, like sliced olives.

Gee, depends on the kids ages, too.
Try Weenie Men.
Take a hotdog...... cut in half lengthwise, but only part way up. This is for legs.
Then cut along the sides at about 1/2 way cutting toward the top (the end you DIDN't cut before), for his arms.
Poke little holes for eyes and a little slit for mouth.
NOW, microwave and the arms and legs will stick out.
OR slice apples, cheese, luncheon meat and crackers. Add carrot sticks with some ranch dressing. My kids always loved this "meal".

Melba toast with a 1/3 of a cheese slice on each cracker, broiled in the oven to melt and then a line of ketchup down the middle. Sounds terrible, but it's yummy. Or Kraft dinner, hot dogs, soup, grilled cheese. Another idea...growing up we had "special lunch" which was a whole bunch of odds and ends out on the table and we could choose...sliced deli meat, pieces of fruit, lettuce, cut up veggies and dip...just whatever you can find. Peanut Butter and Jelly sandwiches. With a glass of milk and an apple. If they want a snack then get crackers and put Peanut Butter and Jelly in between them. Ritz crackers are the best for it. Or you can make Macaroni and Cheese. Or a can of Soup. Ramon Noodles, you can just microwave it in a bowl for 3 minutes.

Little kids love scrambled eggs no matter what time of day. Make some toast and fresh fruit and lunch is served. Try grilled cheese too, always a favorite.

peanut butter and jelly was always a staple when I was growing up, cheese sticks for my kids later in life, plus any lunch meat they liked,,, young kids love the sandwich maker from pamperchef, it cuts and crimps the crust off the bread and makes a Little circle sandwich

turkey or ham and chesse roll ups. fruit anything frozeen that you can heat up in a microwave. Stuff thats easy to make so you can still watch the kids when you're doing it.
