On-The-Grill Pineapple Upside-Down Cake
In a large 10-12-Inch nonstick covered kettle, place the following:
Melt 1/4-pound, One stick of butter in kettle.
Add 1.5 cups of light brown sugar. Stir until it melts and blends with butter.
Drain and set aside juice from one can crushed or sliced pineapple
Place pineapple on top of sugar across entire bottom of pan.
Prepare batter from one box of white or yellow cake mix. Use drained syrup from can of pineapple and milk for liquid per recipe on box.
Cook on low heat setting, placing pan away from direct flame. Remove when top of cake is medium to light brown and toothpick comes out dry. Turn off grill and carry kettle with hot pads on handles to breadboard covered with aluminum foil. Turn kettle over quickly and allow cake to drop to foil. Allow pan to cool before removing. Serve with cool whip, ice cream or whipped cream. Yummmmm!
NOTES: This is easy and fun. Remember: Every grill is different. Some are hotter than others and they are designed to put a lot of direct heat on steaks and burgers. When I do this on my smaller grill at home, I do all the prep work in the kitchen. I preheat the outdoor grill using the lowest heat setting on only half of the grill. I then extend the cooking time and use the toothpick test. This slower, lower heat method prevents overheating and the direct heat on the bottom of the pan. I place the pan on the opposite side so the grill works as an oven and avoids the direct flame heat.

A barbeque grill can be used just like an oven. Prepare your upside down cake and preheat your grill. When it reaches baking temperature, put the cake in. You may want to put the baking pan on top of another inverted pan so as to not touch the grilling surface which will get hotter than the grill's internal temperature. Or you can use a pizza stone which will keep too much heat from transferring to the bottom of the baking pan. The only problem with using a grill is that the temperature is not automatically controlled like an oven, so you will probably need a good oven thermometer if your grill does not have one, and periodically adjust the heat, or prop open the grill top to control temp. I've baked cookies in a grill using a pizza stone when it has been too hot to cook inside.

It's Possible! Here's a recipe for Grilled Angel food cake! I'm sure you can use your pinapple upsidedown recipe in it's place! Good luck!
Ingredients
1 1/2 cup strawberries, chopped
3/4 cup chopped rhubarb
1/2 cup sugar
6 tablespoons water
1 3/4 teaspoons vanilla
1/8 teaspoon cinnamon
1 prepared angel food cake, cut into 6 pieces
3/4 cup reduced-fat whipped topping
Directions
Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source.
To make the sauce, in a saucepan, combine the strawberries, rhubarb, sugar, water, vanilla and cinnamon. Cook on medium heat until the mixture just starts to boil, about 5 minutes. Remove the saucepan from the heat and set aside.
Place the angel food cake toward the edge of the grill rack where there is less heat or on the broiler pan. Grill or broil until each side turns brown, about 1 to 3 minutes.
Place the angel food cake on individual serving plates. Top each piece with 1/4 cup of the strawberry-rhubarb sauce and 2 tablespoons of the whipped topping. Serve immediately.

Strawberry-Rhubarb Crumb Cake
INGREDIENTS:
3 cups strawberries
2 cups rhubarb
1 cup sugar
1/2 cup flour
1/2 cup rolled oats
1/2 cup butter
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
PREPARATION:
Spray a 8x8 inch grill safe baking dish with cooking spray. Mix together the sugar, flour, butter (cut into pieces), oats, cinnamon and nutmeg. Arrange fruit in the baking dish and cover with mixture evenly.
Cover with foil and place on preheated grill. The temperature should be around 350 degrees. After 20 minutes remove foil and continue cooking for another 10 minutes. It's done when the fruit is tender and the top is a golden brown. If the grill gets too hot prop the lid open an inch or two.

The only cake that I grilled was on a skewer. However if you want to bake a cake for camping, this is what we did in girl scouts. Take a large box. Line the inside and outside with aluminum foil. Tape together top portions of box so that they swing out like a door. Place a small oven rack inside or even a thick cooling rack will work. Prepare your cake mix according to the box and then use charcoal and one of those charcoal starter kits. Make sure that you have an aluminim pie plate to catch the charcoal. Once it is started, put charcoal into pie place and place in bottom of your box. Let set for a few minutes to warm up box. Once coals are no longer bright red, place cake in box and leave it set, leave in there for the time on directions. Place a heavy object in front of door on box to prevent any additional heat loss. After checking this intial time, if not done, just let it set in oven until done. Good luck.....

wow...all those people saying its not possible must have never been through a hurricane. well, I've been through several, and i can tell you its possible to cook just about ANYTHING on the grill.
my one advice to you is to be careful what kind of cake you make. try to chose something with strong flavors that will stand up to the smokey flavors of charcoal or wood (if you're using a charcoal or wood burning grill). if you're using propane/natural gas, you can seriously cook whatever you like. most kitchen stock stores carry ceramic plates that you place on the grill to make your baked goods on. for your pineapple upside down cake my only suggestion would be to REALLY butter up the pan (you should not be able to see through the butter or grease) and instead of using canned pineapple, use FRESH pineapple and cut it thicker than you normally would. also, I'd cut the brown sugar with butter as you pack the bottom of the cake pan.
other than that, have at it!
p.s.: carrot cake is out of this WORLD if made on a charcoal grill. you'll never want it another way!

I suspect this can be pulled off. After all it generates heat and that's all you need to bake. Of course you can't toss it n the grate for reasons obvious but prepare it in a pan as you normally would. Light one side of the grill or of charcoal place the coals over to one side. Place the pan on the side where there will be no flame. You're convection cooking. Using the diverted heat to bake your cake.
A word to the wise. The temp may not be as stable as your oven and opening the grill to look at it may cause it to fall. Each time you open the lid to peek add an additionbal 10 minutes or more of cooking time.

You can use any bbq as an oven. Just keep the burner below the pan off and try to get the temperature as close as you can to the recipe.
