You've got beans, cheese and fixin's in the dip and I'm assuming you've got tortilla chips for the dip, so I wouldn't use the same ingredients in an entree (like burritos or tacos). I'd make a meat entree like fajita meat, skirt steak or flank steak (aka carne asada) to go with it and serve it with sangria or Coronas with lime.

Beef, chicken, or shrimp quesodillas along with Spanish rice, pico, sour cream and guacamole...All are a snap to make and quite inexpensive. Clean up is a breeze too. Hope you have a great dinner party. Top the evening off with margaritas. (on the rocks are always better than frozen) Best Wishes.

since you are serving one layered dish, make a layered entree like mexican lasagna.
use corn tortillas as noodles, use chorizo instead of italian sausage, use enchilada sauce...i have a recipe on my profile, as tomato sauce, and use cilantro as your fresh herb! cheddar cheese instead of mozzarella, cottage cheese and egg to sub for ricotta...
this is a terrific lasagna!
take any lasagna recipe, and make the aforementioned substitutions!
