I want to make a fairly tall cheesecake so I need a really tall pan. Most are between 2-3 inches tall and I cant find the big ones for the life of me. Any ideas?

I'd like to add some vegetarian dishes. Whatever I add has to be really inexpensive as our finances s*ck. And quick & easy b/c I cook (and often shop) after work. I am getting tired of the same old recipes, so my motivation is increasing. Another major factor: my wife developed colitis so some of the 'old standards' are now off the list. Currently I cook a few basic dishes:

carmelized pork chops w/ garlic & applesauce
chicken or pork jambalaya
(I like these two b/c they are easy to do in the electric skillet).

chicken or beef w/ peppers (etc.) in a wok
baked snapper
spaghetti
shepherd's pie
meat loaf
beef stroganoff
quiche

(non-dinner)
oatbread, apple crumble, lemon meringue pie, chocolate sauce

I over spiced my chili! Is there any way to take some of the heat out of the chili? Someone once told me to use a potato or crushed pineapple to take the heat out. Do these things work, and how do you go about doing it?

I am heading towards the end of my pregnancy and am of course extremely tired and there for know that I won't have the time or energy to cook after I have the baby. I am wanting to make some meals ( lasagna, pasta sauce, ect..) and freeze them. I'm not due for 6 weeks and need to know if the food will still be good by that time or if that is too long to have them frozen. I could use some help with this one.
