I say white, but it sure pairs well with red wine.

We know goat,lamb etc.as a red meat,hen,duck goose as poultry,I have no idea about white meat.

In culinary terms they are poultry,so treated like chicken(although as someone said they do pair well with red wine).
In nutritional terms they are very fatty, so more similar to red meat.

Duck is a type of poultry, "white" meat, although it is all DARK meat
