If you're referring to hunting:
Field dressing-removing the animal's entrails. Wipe the body cavity clean and remove any remaining tissues and damaged flesh. Prop the body cavity open by inserting a stick in the rib cage.

Field dressing is the removal of the animal's entrails while you're in the area where it was harvested. It helps cool the carcass quickly and in large game such as deer, it also makes it lighter to carry out of the field. The skinning and final cleaning is then done once the animal is home (or at the processor).

when somebody gets hurt and is wounded ,somewhere in the land ,or beach,any where away from civilization,
they get fixed temporary with bandages and antiseptic ,from the first aid box.
that is field dressing

than later when they go home or back to people they get proper attention at a hospital or Doctor


Hunting
and it means gutting a kill ,and usually burying the entrails .or leaving it behind,so that it weighs less carrying back.

The previous answers are correct, that it refers to cleaning a freshly taken (killed) animal. But please don't think that happens....maybe in the movies, but it's just not practical. Think about it.....what would you do with a deer you just cleaned in the middle of the wood, when you're riding a 4-wheeler??? Hunters don't typically do this in the woods. The animal is retrieved and taken back to their home, hunt club, etc. and there, they take care of what has to be done. Different cuts of meat are selected at this time, and the meat is properly stored or promptly used.
