3/4 cup mayonnaise
1-1 1/2 tablespoon Tabasco sauce (more or less to taste)
1/4 cup chopped cilantro

Spicy Mayo Sauce

1/2 c. Japanese mayo (can be bought in asian stores)
1/2-1 tsp. wasabi powder (or according to taste)
1 tbsp. kikoman soy sauce

Mix this with your kani, chopped carrots and some spring onions. Yum!

Kani is the Japanese term for crab meat and applies to many types of crab but normally it refers to the artificial type made of pollock, usually called "sea legs" or the like.

The hot spice in the authentic version of the mayonnaise sauce is shichimi togarashi, Japanese seven spice powder. Use it sparingly, it can pack some heat. It is usually available in very small containers at Asian food markets.

Just cut the crab into bite size pieces, add diced celery and chopped parsley or cilantro to taste, a squeeze of fresh lemon juice and toss with enough mayonnaise with about 1/2 tsp shichimi togarashi per 1/2 cup of mayonnaise. A drop or two Worcestershire Sauce or better still, a few drops of Asian fish sauce will enhance the flavor.

That would most likely be considered a "Specialty Roll". At most sushi bars, you can either order off the menu, or request to have certain ingredients put into your sushi. I would just ask the chef or your waiter and I'm sure they'd be happy to make it for you!
