I want to make a fairly tall cheesecake so I need a really tall pan. Most are between 2-3 inches tall and I cant find the big ones for the life of me. Any ideas?

If you try to make a 4" high cheesecake, it would almost certainly fall in the middle. That's probably why they don't make one, at least I've never seen one. You could try williamssonoma.com or chefscatalog.com, but I doubt you'll find it.

Probably your only hope is to do like the other person suggested and bake two and stack them.

I was wondering the same thing. Maybe next time I'm in a bakery that makes their own cakes, I'll ask them!

You could make 2 of the 2-3 inch tall ones ..one with out bottom crust...and put them together..turn the one without bottom crust on top of the one with bottom crust. Then put your topping on the two that are combined.
