yes, the only difference is the time in which you cook. a convection oven takes less time and in some cases you may want to lower the temp. so use what you have been using but keep an eye on things until you get a feel for the temp/speed difference of your oven.

The only difference between a regular oven and a convection oven is the fan which circulates the air in a convection, making the baking or roasting temperatures constant throughout the oven, therefore reducing baking or roasting time by about 25%. Take that into consideration when using convection.

yes as long as they are oven safe. Also some are made like chef quiality that can go in the oven. or all stanless steel that don't have any coating on them and have all stanless steel handles.
