My husband and i aren't the healthiest of eaters, i need some recipes for healthy and flavorful dinners for the two of us. We need to start taking better care of ourselves.... :)

The problem:
We don't like many vegetables

Things we do like:
MEAT, but catfish is the only fish we like
Corn, carrots, potatoes, onions, bell peppers(when cooked in a mexican dish or what have you)
and..... fruits, lots of them.

So, flavorful, healthy, and affordable please? I sure would appreciate your help!

It will be served with honey-roasted applesauce. But I am stumped to come up with what kind of potatoes to serve with this. All I can think of are "parslied potatoes." HELP! Does anybody quickly have a good idea? Thanks.

Tomorrow is Mardi Gras and my sister and I are throwing a party. We are preparing Vichyssoise (cold potato soup) for the first course but it calls for leeks and we have no idea how to cut up the leeks for the soup. Does anyone know how to cut up leeks??

My boyfriend and I have just moved away from home and into our first apartment together :) Now, we're trying to put together menus and planning for meals for the whole week (in order to save and conserve our money, we're hoping to buy everything for a whole week at one time). The only meats i eat are fish and chicken, but he'll eat just about anything [don't most men? :) ] I was wondering if you guys had any recipes to share with us that preferably

1. are more on the cheap side. we aren't very pressed for money, but we are trying to save up some.
2. don't take a long time to make.

we both like to cook and experiment so anything you guys throw at us will be considered! Thanks in advance!

Holley (and Timmy, too!)

Anybody know of a good recipe that has chicken in it? Hopefully unique, but I could live if it wasn't.

I've just moved into a new place which has a Neff cooker but the oven won't work as I apparently need to set the clock. Typically there is no manual and the Neff website is as helpful as a chocolate teapot.

Any ideas?
