It will be served with honey-roasted applesauce. But I am stumped to come up with what kind of potatoes to serve with this. All I can think of are "parslied potatoes." HELP! Does anybody quickly have a good idea? Thanks.

Well, it's tomorrow morning, and I want to thank you. All three answers I got were terrific ideas. Just so you won't think I have no imagination, I forgot to say my husband is "allergic" to garlic & onions. I feel so dumb-THAT was my problem. But I like these three recipes alot . Thankyou, thankyou!

cut your potatoes into a medium dice. leave the skin on, just make sure to wash them. chop up some fresh rosemary. coat your potatoes well in olive oil, the rosemary,thyme, parsley & salt and pepper. roast in the oven at 375F for about 15 minutes, then turn down to 350F for another 20 minutes. and you're good to go.

I have an easy and tasty potato idea. Peal and cut potatoes in to big chunks, boil until cooked. In a pan toss in some olive oil, butter chopped onions and garlic. Saute till translucent, then add potatoes. I've added green onions and chopped up bacon for color and season as desired....it's easy and super Delicious. Makes your house smell goooooooooood too:o)

For pork tenderloin, you really can't go wrong with garlic mashed potatoes garnished with fresh parsely. Yum.
