Broiling is the opposite of baking, which applies heat from below, and allows it to move around the food by convection
Broilding will also heat your oven, but the intent is to use radiant heat from above, so you use the top element in your oven and it will be very hot.
I suspect most people would think of putting meats under a broiler for a main dish, but the broiler is more versatile than that.
Some vegetables can be done this way, and many dishes can be broiled at the end of the cooking cycle to give a crisp look or top to the food, such as melting cheese on bread for an onion soup, or something as simple as garlic bread, where you want a lot of heat applied quickly.
Even desserts such as meringue topping can be browned slightly by broiling, and be reserved for later, or be served while still warm. (Be careful with these, as this type of browning happens VERY quickly)
It delivers very high heat, and cooks the surfaces very quickly, so if you are cooking something thick, you may need to leave the door open a bit to allow some heat to escape, or the built-in heat sensor will turn it off when it reaches the maximum allowed temperature.

Broiling is a form of "dry cooking". Typically with the heat source above the item that's being cooked. Just about anything can be broiled, from beef to fish to veggies. Simply place your food under the broiler and cook it until its your desired temperature.

broiling is hotter than 500. it is the top element in your oven, or the bottem drawer in a gas oven. the best food to cook( i think) this way is steak, and nachos. it keeps the steak very tender(compared to pan frying). broiling works well for browning things as well. just watch food carefully, it will burn really fast.

I broil steaks, mainly because I do not have a grill. I marinate them, then cook them under the broiler turning them every 10-15 minutes, depending on thickness.
