Cheesy au Gratin Potatoes
Ingredients:
6medium boiling or baking potatoes (2 lb)
1/4cup butter or margarine
1medium onion, chopped (1/2 cup)
1tablespoon all-purpose flour
1teaspoon salt
1/4teaspoon pepper
2cups milk
2cups shredded natural sharp Cheddar cheese (8 oz)
1/4cup dry bread crumbs (any flavor)
Paprika
1.Heat oven to 375ºF.
2.Scrub potatoes but do not peel. Cut into 1/8-inch slices to measure about 4 cups.
3.Melt butter in 2-quart saucepan over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
4.Stir in milk and 1 1/2 cups of the cheese. Heat to boiling, stirring constantly. Boil and stir 1 minute.
5.Spread potatoes in ungreased 1 1/2-quart casserole. Pour cheese sauce over potatoes.
6.Bake uncovered 1 hour. Mix remaining cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 minutes longer or until top is brown and bubbly.

Not the Same Old Cheesy Potatoes
2 lb Russet potatoes; cooked
.. peeled and shredded
1 1/2 c Sour cream
1 1/2 c Swiss cheese; shredded
1 md Carrot; shredded
1/4 c Minced onion
2 tb Minced parsley
1 ts Salt
1/2 ts Dill weed
Dash pepper
Paprika to taste
Combine all ingredients except 1/2 cup Swiss
cheese and paprika. Turn into buttered 1 1/2 quart casserole; sprinkle with remaining cheese and paprika. Bake in a preheated 350° oven 30-40 minutes.

I tried this recipe with a ton of cheese (more than it called for)... it was very tasty:
Kittencal's Ham and Potato Casserole
5 lbs potatoes, cooked and cubed
2 cups cooked ham, finely diced (or use cooked bacon, crumbled)
1 small onion, chopped
4-5 green onions, chopped
1 1/2 cups mayonnaise
1 1/2 cups sour cream
seasoned salt and pepper (or use white salt)
5 tablespoons melted butter
1/4-1/2 teaspoon garlic powder (optional)
1 1/2 cups cheddar cheese, cubed
1 cup cheddar cheese, shredded (or to taste)
1. Grease a medium size casserole dish.
2. Set oven to 350 degrees.
3. In a large bowl, mix mayo, sour cream, melted butter, garlic powder, green onion and yellow onion, seasoned salt and black pepper.
4. Add in the cooked cubed potatoes, cubed cheese and ham; mix lightly.
5. Pour into prepared casserole dish.
6. Bake 20 minutes or until hot and bubbly.
7. Remove from oven and sprinkle the grated cheddar on top; return to oven and bake 5-8 minutes more or until the cheese has melted.

INGREDIENTS
4 large potatoes, peeled and sliced
1 small onion, finely chopped
1 1/2 cups shredded Cheddar cheese
1 teaspoon margarine
salt and pepper to taste
DIRECTIONS
Layer the potatoes, onion, cheese, salt and pepper into a microwave safe casserole dish. Once finished layering, place 1 teaspoon of margarine on the top of the uppermost layer. Cover and cook in the microwave oven on HIGH for 10 minutes.
Remove the dish from the microwave and stir before cooking for another 10 minutes or until done. Stir well and serve

Cheesey Mashed Potato Bake
6 servings
25 min 15 min prep
10 1/2-12 white potatoes
10 5/8 ounces grated mature cheddar cheese (save some back for topping)
milk
butter
paprika
dried herbs
salt
pepper
Peel and boil the potatoes in a pan of slightly salted water for 30 minutes or until soft.
Drain the potatoes then mash with as much butter and milk as desired.
Mash in the grated cheese and mix in a pinch of the mixed herbs, salt and pepper.
Spoon mash mixture into an oven proof dish so the mashed potato reaches the sides.
Top with the remaining cheese, paprika for colour and some more herbs if desired.
Grill/broil under a high heat until golden and bubbling.
Serve immediately.
Cheesey Potato Leek Casserole Bake
8-10 servings
1 hour 15 min prep
8 cups potatoes, diced into 1 " cubes (about 2 1/2 lbs)
1/2 cup butter
2 garlic cloves, minced
3 medium leeks, thinly sliced
1 large tomato, diced
1 teaspoon salt
3/4 teaspoon pepper
3/4 teaspoon paprika
3/4 teaspoon parsley
1 cup evaporated milk
2 ounces cream cheese
8 ounces sour cream
2 cups shredded cheddar cheese
1 cup swiss cheese (or use more cheddar-sharp is good)
In a large pot, boil diced potatoes for about 15 minutes or just until tender (not mushy!). Drain; then rinse with cold water and drain again. Place drained potatoes in a large mixing bowl.
Meanwhile, in a large skillet, melt butter over med-high heat. Add garlic and leeks and sautee just until leeks become tender. Add diced tomato, salt, pepper, paprika and parsley; stir well.
Reduce heat to low.
Stir in evap milk, cream cheese, and sour cream until well-blended.
Stir in shredded cheeses; combine well. Pour over drained potatoes and gently toss to coat.
Pour into lightly sprayed 13" x 9" baking pan. Bake; uncovered at 350 for 30-35 minutes or until top begins to slightly brown.

A hash brown casserole recipe from the forum, made with sour cream, cheese, and frozen hash brown potatoes.
INGREDIENTS:
·1 pkg. frozen hash browns (country style - 30oz)
·1 cup sour cream
·1 stick margarine (4 oz) or butter
·1 can cream of chicken soup
·1 T. instant minced onion (or freshly chopped onion to taste)
·2 cups shredded sharp cheddar or colby cheese
PREPARATION:
Melt margarine. Place hash browns in 9 x 13 dish. Pour margarine over and mix well. Mix sour cream, soup, onion, and cheese in a large mixing bowl. Pour hash browns in the bowl and mix all together well. Then put all back in the 9 x 13 pan.
Bake uncovered at 350 degrees for one hour.

First of all, try not to overcook your veggies by over boiling. Try roasting them in the oven with a light brushing of olive oil and a little butter basting sauce. I try to avoid sauces as a cover sauce for fresh veggies. Fresh herbs work nicely to add a little "umph" to the taste. There are plenty of new seasoning mixes that are low insalt that you can sprinkle on the veggies as well. For carrots, try sautee with a little unsalted sweet butter and brown sugar or a dash of maple syrup. Broccoli and cauliflower are great just cooked crisp with a ranch dipping sauce. Peas...well I'll pass on this one. Stringbeans steamed with bacon slices taste great, and zucchini sticks lightly battered with tempura batter and parmesean cheese and oven fried are tasty too. Invest in a simple steamer basket and you'll never go wrong! Good luck!

quarter the potatoes bake at 400 for 40 minutes, pull them use cheese whiz squeezable cheese and real bacon bit to top bake 5 more minutes cool and serve
