I made boneless, skinless chicken breasts tonight marinated in a pomegranite vinaigrette. I have three of the half breasts (they are quite large, so about 3 cups or so) left over and am wondering if anyone has any good ideas for the leftovers. I want to do something different with them. Something unique and tasty.
The flavor is only very slightly sweet and it is very light. I don't have a strong marinade to deal with as far as potential recipe issues go, but I am a little burned out on chicken salad, etc. If you have a great and unusual chicken recipe (or two or three...) that calls for cooked chicken, please share!
