I don't eat chicken (or any meat for that matter) but when I did, I used to find that using left over chicken was brilliant for making a chicken-casserole type deal served over steamed basmati (with wild) rice. All you need to do is cut the chicken into strips, choose a sauce (maybe honey-mustard???) add some shallots, mushroom, a little tomato and chili, simmer in the sauce then serve over your rice.

CHICKEN TETRAZZINI:
2 cups cooked chicken, diced
1/4 cup margarine or butter
1/4 lb to 1/2 lb. fresh mushrooms, sliced
1/4 cup flour
2 cups chicken broth
2 Tablespoons dry Cooking Sherry
1 cup evaporated milk
salt and pepper to taste
8 ounces cooked spaghetti, drained
1/2 cup parmesan cheese, grated
Melt margarine, add mushrooms and cook 5 minutes. Stir in flour. Add chicken broth, sherry and milk. Stir and cook until mixture boils and thickens. Season to taste. Remove from heat.
In 2-quart buttered casserole, put alternate layers of spaghetti, chicken, and mushroom sauce; finishing with spaghetti. Sprinkle top with grated Parmesan cheese.
Bake at 400 degrees for 20 to 25-minutes or until bubbly.

You could shred the chicken up, place it on a pita, or flat bread, and melt cheese on it, add a little honey mustard and shredded lettuce, tomato, and you've got lunch!
Or make chicken soup out of it...Just buy the pre-made chicken broth, add your favorite veggies, add your favorite noodles or rice, and that would be a yummy dinner. Make it spicy, and add a bit of soy sauce and rice noodles for Asian flavor.
If you have a pie crust, you could make a chicken pot pie...
Or you could make chicken casarole with rice and cheese and can of Campbells cream of chicken or mushroom, and broccoli, or corn, or okra, or anything you have a taste for.
Chicken stir fry is good too!

how does a homemade pot pie sound ? O geez now i gots to go spend money :)
two ready made pie crusts
canned vegetables
chicken soup or gravy
make sure to chop chicken into cubes
then add veggies and gravy
throw in a little Mrs. Dash
stick in oven at 350 for an hour
Viola'!

Make a roux (1/2 c oil or bacon fat 1/2 c flour and stir until it's dark brown and has a nutty flavor)
Sautte an onion, bell pepper, celery, and garlic. Add to roux
Add chicken and water and bring to boil (throw in some cooked sausage now if you want)
Add seasonings (salt, black pepper, red pepper, lemon pepper, any cajun/creole seasonings)
Serve your gumbo over rice :-)

CHICKEN SPAHGETTI
1 lb spahgetti
1 lg can cream o chicken soup
half a can of milk
diced cooked chicken
Boil spahgetti, meanwhile mix soup, milk & chicken. Drain noodles, add soup mixture & pour in to baking dish. Top with shredded cheese & bake @ 375 until bubbly.
You can also mix in olives or veggies( precooked).

You can make Chicken ala king over biscuits. I love that
Chicken noodle soup, you would have to use canned broth for both of those.

you can freeze some of the chicken for another meal.....
i use left over chicken for a stir fry.
add chicken to saute the following:
romaine lettuce, shredded cabbage
any kind of bell pepper, red,green or yellow,
any leftover veggies, mushrooms cooked rice or pasta
onions, cooked black beans or Lima beans
season to taste this will taste good

-i don't know if the flavor is right for a regular salad, but that's an idea
-make it into a sandwhich
just make a list of things you like that's good with chicken and see what you can come up with.

Leftover Chicken Croquettes
INGREDIENTS
3 cups cooked, finely chopped chicken meat
1 1/2 cups seasoned dry bread crumbs
2 to 3 lightly beaten eggs
2 cups sauteed chopped onion
1 tablespoon chopped fresh parsley
1 teaspoon salt
1/2 teaspoon ground black pepper
DIRECTIONS
In a large bowl combine the chicken, bread crumbs, 2 eggs and onion and mix well; if mixture is too dry to form patties, mix in another lightly beaten egg. Then add parsley, salt and pepper to taste, mix well and form into small patties.
Heat oil in a large skillet over medium heat and fry patties in oil until golden brown
Chicken Nachos Recipe
1 large bag of nacho chips
1 can refried beans
2 cups grated cheddar cheese
2 cups cooked chicken, chopped
1 large jar salsa
PREPARATION:
Line a cookie sheet with foil wrap. Spread chips evenly on sheet. Drop small spoonfuls of refried beans on the chips. Mix Salsa and chicken together, making chicken "wet". Pour mixture over the chips evenly. Top with cheddar cheese. Broil for 8 to 12 minutes, or until the cheese is fully melted.
Chinese Chicken Fried Rice II
INGREDIENTS
1 egg
1 tablespoon water
1 tablespoon butter
1 tablespoon vegetable oil
1 onion, chopped
2 cups cooked white rice, cold
2 tablespoons soy sauce
1 teaspoon ground black pepper
1 cup cooked, chopped chicken meat
DIRECTIONS
In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.
Heat oil in same skillet; add onion and saute until soft. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot.
