Non Alcoholic Summer Cooler Have this waiting for you in the fridge for after work or gardening. Use your own combination of fruit (all may not be available at the same time) but I do recommend that you keep the base cranberry juice 1 (40 ounce) bottle cranberry juice cocktail, chilled 1/2 cup fresh orange juice 1 lemon, juiced 1 lime, juiced 1 whole orange, sliced thin 1 lemon, sliced thin 1 lime, sliced thin 1 cup fresh strawberries, cleaned & halved 2 fresh peaches, peeled,pitted and thinly sliced 1 small apple, peeled,cored and thinly sliced 2 tablespoons sugar or Splenda sugar substitute 1 (26 ounce) bottle club soda ice cubes Combine all the ingredients except the club soda. Stir until the sugar has dissolved. Refrigerate for a couple of hours. Just before serving add the club soda and pour over ice cubes (Or put a splash of soda in a glass and fill up with ice cubes and the sangria).

Bruschetta
2 tomatoes, cubed
1 teaspoon dried basil (or fresh basil leaves, torn)
4 tablespoons grated Parmesan cheese
2 tablespoons olive oil
1 clove garlic, crushed
seasoning salt to taste
ground black pepper to taste
In a bowl, mix tomatoes, dried basil, Parmesan cheese, olive oil, garlic, seasoning salt and ground black pepper. Cover and chill in the refrigerator 8 hours, or overnight, before serving. Spoon onto a halved loaf of french or italian bread (drizzled with olive oil). Slice loaf into 2" pieces.

Fill cherry tomatoes with pesto sauce or mascarpone (using a baggy w a corner cut off).
On toothpicks or skewers, alternate cherry tomatoes, boccocini (fresh mozzarella balls), small chunks of italian bread (drizzled w olive oil.) If you have a grill, these are great grilled for a few seconds, till cheese gets melty.
Antipasti platter - cold cuts - salami, proscuitto, pancetta, roasted red peppers, olives, marinated artichoke hearts (canned), garbanzo beans, assorted cheeses (mozzarella, etc.) Set out sliced loaves of italian bread or foccacia - guests can make their own little sammiches.
Pick up Tiramisu from a local bakery.

Salami, a selection of cheese, olives, nice bread, nuts. None of them need an oven. You can easily make bruschetta if you have a toaster: just toast the bread, rub it lightly with a peeled clove of garlic and drizzle with good Extra Virgin olive oil.
