I have been given some fennel. How can I cook it, what can I do with the top bits ? Not soup please . Thanks

Fennel is also delicious grilled... and is easily paired with citrus .. i love fennel marmalade

hmmm... i never use a recipe... but it's basically
two large or three small fennel bulbs topped and cored and then sliced thinly
1 T oil
1/2 c white wine vinegar
1/2 c sugar
orange and lemon zest 2-3 total
salt
heat oil in a wide pan and sear off fennel for a few minutes...
till soft... don't crowd pan..... pour in vinegar... let it cook down to 1/2 the volume of liquid then add sugar salt to taste/adjust and citrus zest... long strands is yummy.... let this cook down till it is almost dry... it should be fairly gooey and thick.... pull it and let it cool... delicious with halibut and asparagus

I love fennel. I have used it like celery in salads, put it in pasta sauce and the best recipe is with pork. I changed fennel seeds for fresh fennel. Here it is:
INGREDIENTS
4 pork chops
2 tablespoons garlic salt
1 tablespoon fennel seed
1 cup white wine
DIRECTIONS
Sprinkle garlic salt on both sides of the pork chops. The garlic salt should pretty well cover the chops.
Pour a little olive oil or other cooking oil into a skillet. Put the pork chops in the frying pan and place fennel seeds on top of the pork chops. 10 to 15 fennel seeds per pork chop will probably do. Let the underside of the pork chop brown then turn over. Once both sides are browned flip again.
Pour the wine into frying pan; cover and reduce heat. Simmer for 10 minutes and flip the pork chops over. Cover them again and let them simmer for another 10 minutes. Make sure the wine doesn't completely evaporate or the pork chops will burn. You may have to add a little more wine to the pan.

You can saute the fennel bulb cut in a big dice with chopped onion in some olive oil. Add salt, pepper, and a bit of red pepper flakes. The put some heavy cream into the pot to thicken - simmer a few minutes and voila' delicious dish.

The fennel tops are excellent to stuff inside a baked fish and give the flesh a lot of flavor. Bake fish with onions, fennel, lemon and butter or olive oil.

Roasted fennel is the yummiest way to try it I think.
The stalks you can actually eat raw, or use as a garnish
**

2 fennel bulbs (thick base of stalk), stalks cut off, bulbs sliced
Olive oil
Balsamic vinegar

1 Preheat oven to 400°F.

2 Rub just enough olive oil over the fennel to coat. Sprinkle on some balsamic vinegar, also to coat. Line baking dish with aluminum foil. Lay out the fennel and roast for 15-20 minutes, until the fennel is cooked through and beginning to caramelize.

I have a wonderful Peas with bacon and fennel recipe that we made in school.

Peas with fennel and bacon (I don't like peas but this was really good. )

Ingredients:

•4 tablespoons olive oil
•1 clove garlic, minced
•4 oz onion, small dice
•6 oz fennel bulb, small dice
• 4 oz bacon, blanched, (cooked in boiling salted water for 3 minutes or so), small dice
•1 1/2 lb. peas, fresh or frozen
•Salt and pepper TT (to taste)
•4 fl oz chicken stock

1.) Heat olive oil in a medium saute pan. Add the garlic, onion and fennel. Saute until the vegetables are soft. Add the bacon and saute for 3 minutes. Add the peas and mix well. Season with salt and pepper.
2.) Add the chicken stock and cook over a low heat until almost no liquid remains and the peas are tender. Adjust the seasonings and serve hot.

BAKED FENNEL WITH CHEESE

3 med. fennel (with stalks)
2 qt. water
1 tsp. olive oil
1/2 c. Parmesan cheese
1 tsp. salt
2 c. grated Monterey Jack cheese

In large Dutch oven add 2 quarts water, salt and olive oil. When water boils add fennel which has been halved and quartered. Boil 3 to 5 minutes or until tender. Drain and reserve 1/2 cup liquid. Place in a single layer in shallow buttered baking dish. Pour reserved liquid over top. Sprinkle grated Jack cheese. Add 1/2 cup grated Parmesan. Bake at 375 degrees to melt cheese and brown lightly.
