I am so tired of the same old same old...

I don't like to cook (not that I can't) I am just a simple person. I want to be able to make meals in mintues not hours. Nothing over 15 min prep and cook time.

Any suggestions

I've tried and tried to make homemade bread and rolls. I've followed reciepes to the letter but to no use. they never rise. Could someone tell me what is wrong? Prehaps walk me through the steps on how to make bread and rolls. Telling me how the dough should look and things like that. Thanks, Mom2x's

My wife and I are having our pastor and his wife for dinner in a week. We will begin with a mix of greens toped with a rasberry vinegrete, followed by fillet mignon, a side of asparagus toped with melted butter and almonds, and Shrimp Scampy, and I am looking for a recipe for creme brulee. I dont have a torch, so is there any other way to burn the sugar?

For some reason I remember hearing from my dad when I was younger that you should always start with cold water, but i cant remember why. Now I am in college trying to cook for myself and some kids are starting with hot water, while other kids are starting with cold water.

It's a quickbread, like banana bread, and it came out too dense and rubbery. Can you tell me how to change it so it comes out lighter, but still flavorful and moist?
4 1/2 c flour
2 1/4 t baking powder
1/4 t baking soda
2 1/2 c sugar
1 1/4 c veg oil
1/2 T salt
1/2 c orange zest
1/4 c light corn syrup
4 lg eggs, beaten
2 1/2 c water (sounds like too much to me)
1 1/4 c evap milk
1 1/2 T orange extract
Sift together dry ingredients. In another bowl, combine eggs, zest, oil, corn syrup, water, evap milk & orange extract. Add to dry mix, stirring until combined (I had to use a mixer to get rid of lumps). pour into 2 greased loaf pans & bake at 350 for 50-60 min.

The flavor is nice & orange-y, but I wonder if I could use orange juice in place of some of the water to add even more flavor. Or does the acid do something to the leavening ingredients?

Also, could I use melted butter in place of some of the oil for added richness?

I am trying to eat healthier, but I don't really know where to begin. Does anyone have a great cookbook they couldn't live without that makes recipes that people like me (who are used to fat, refined carbs, etc) can enjoy? I would rather start with some recipe makeovers, which I can experiment with, and then move into learning to like new things from there. I hope this makes sense.
