I get sick of eating the same things over and over again. I need new side ideas besides green beans, corn or mac and cheese please help. I am tried of cooking the same thing every week.

How about Twice Baked Potatoes.

Bake them as you usually would (350 degrees for up to an hour, depending on the size of the potato)

Take them out and cool them down enough to handle.

Carefully scoop out most of the white part, but leave the skins aside

Gently mash the potatoes, adding a tablespoonful of sour cream and some butter. Mix in bacon bits, green onion, diced, cooked carrots or green and red peppers, (just enough for color) Add salt and pepper to taste. Maybe some garlic powder.

Spoon the potatoe mixture back into the skins.

Broil an additional few minutes, enough to toast the top of the potato mixture.

Sprinkle some more fresh green onion or chives.

A nice change of pace without a lot of extra work!

Have you ever had Engagement Chicken???

It is very juicy and easy to make, here is the recipe:


1 whole chicken (approx. 3 lb.)
2 medium lemons
Fresh lemon juice (1/2 cup)
Kosher or sea salt
Ground black pepper

Place rack in upper third of oven and preheat to 400 degrees. Wash chicken inside and out with cold water, remove the giblets, then let the chicken drain, cavity down, in a colander until it reaches room temp (about 15 minutes). Pat dry with paper towels. Pour lemon juice all over the chicken (inside and outside). Season with salt and pepper. Prick the whole lemons three times with a fork and place deep inside the cavity. (Tip: If lemons are hard, roll on countertop with your palm to get juices flowing.) Place the bird breast-side down on a rack in a roasting pan, lower heat to 350 degrees and bake uncovered for 15 minutes. Remove from oven and turn it breast-side up (use wooden spoons!); return it to oven for 35 minutes more. Test for doneness — a meat thermometer inserted in the thigh should read 180 degrees, or juices should run clear when chicken is pricked with a fork. Continue baking if necessary. Let chicken cool for a few minutes before carving. Serve with juices.

Sauted squash and onion? Sounds gross, but really tasty. Just saute the two together in a little olive oil for a few minutes and eat. Don't let the squash get mushy, though.

Sauted asparagus is very good too. Cooked spinach & cream cheese? Yum!

Maybe can try make a chicken stir fry with steamed rice:) Use your basic stir fry ingredients like veg. oil, garlic, soy sauce, and ginger. Add some boneless, chicken breasts and add the vegetables you like (green onions, carrots, broccoli, bell peppers, etc). I like to add a bit of sesame oil at the end of my stir-fry too. try this

steak marinade
marinate
1/4 cup each of garlic powder, black pepper, salt, Tabasco sauce, cayenne, hot curry powder,
1/2 cup red wine vinegar
1/4 cup of olive oil
marinate thawed steaks in covered dish overnight

serve with these side dishes

cheese potatoes
6 potatoes diced peels left on
1 tbsp of garlic powder
salt and pepper
melted butter
1/2 bags of sharp cheese, mix all ingredients except potatoes and butter. boil potatoes til done, dice, add oil to a bake pan, put potatoes in first and add cheese as topping and sprinkle butter evenly, heat til cheese melts

salad with Italian dressing
head of lettuce
1 red onion
1 diced tomato
1 diced green pepper
1/2 cup of Parmesan cheese
mix together, add your fave Italian dressing and enjoy

Onion Roasted Potatoes
(for two)

11 ounces red potatoes, sliced 1/2 inch thick
1 tablespoon and 2-1/4 teaspoons vegetable oil
1/3 envelope onion soup mix

Combine all ingredients in a large plastic bag; shake until well coated. Empty bag into an ungreased 13-in. x 9-in. x 2-in. baking pan. Cover and bake at 350 degrees F for 35 minutes, stirring occasionally. Uncover and 15 minutes longer or until potatoes are tender.


DOUBLE RANCH FRIES
(for two)
1 large potatoes, scrubbed
1/3 cup milk
1/3 (1 ounce) package dry Ranch-style dressing mix
1/3 pinch garlic salt
1-1/3 cups oil for frying, or as needed

Heat oil in a deep-fryer to 365 degrees F (185 degrees C).
Cut potatoes into wedges or fries, and soak in a bowl with milk. Stir together the ranch dressing mix and garlic salt; place on a plate or in a bag. Drain potatoes, and roll in the seasonings to coat.
Place potatoes into the deep-fryer in batches so they are not too crowded. Fry for 5 minutes, or until golden brown. Drain on paper towels, and season with leftover seasoning mixture.

SPANISH RICE
(for two)
INGREDIENTS
1-1/2 teaspoons vegetable oil
3/4 cup instant rice
1/2 onion, chopped
1/2 red bell pepper, chopped
1/4 green bell pepper, chopped
1/2 teaspoon prepared mustard
1/4 teaspoon salt
3/4 (14.5 ounce) can whole peeled tomatoes
1/2 cup tomato juice

In a large saucepan over medium heat combine oil, rice, onion, red bell pepper and green bell pepper. Saute until onions are translucent. Stir in mustard, salt, tomatoes and tomato juice; simmer for 5 minutes.

ALBINO PASTA
(for two)
1/4 (16 ounce) package dry penne pasta
1 tablespoon olive oil
1/4 teaspoon minced garlic
1 tablespoon and 1 teaspoon grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
In small saucepan, saute garlic a small amount of oil. Combine garlic, olive oil, and pasta in a bowl. Mix in parmesan cheese.

one dish chicken potato bake

either chicken quarters or chicken breasts
cubed or wedged potatoes
italian dressing
seasonings to taste

put chicken and potatoes in pan. pour italian dressing all over. bake for at least an hour or until chicken done and potatoes are soft.

Lime Chiffon Pie

Prep time 10 min./ Total Time: 4 hours 30 min.(incl refrigerating)

* 2/3 cup boiling water

* 1 pkg (4-serving size) Jell-O Brand Lime flavor Sugar free gelatin

* Ice Cubes

* 1/2 cup cold water

* 2 Tbsp. lime juice

* 2 cups thawed Cool Whip Free whipped topping

* 1 ready to use reduced fat graham cracker crumb crust (6 oz.)

STIR boiling water into dry gelatine mix in a large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure one cup. Add to gelatine; stir until ice is completely melted. Stir in lime peel and juice.

ADD whipped topping; stir with wire whisk until well blended. Refrigerate15 to 20 min. or until mixture is very thick and will mound. Spoon into crust.

REFRIGERATE at least 4 hours or overnight. Store leftover pie in refrigerator.

Makes 8 servings

Try rice or garlic bread. Just scrap a piece of chewy french bread with garlic and add butter to it. Another good one is mash potatoes and stuffing from a box. Either one are easy and quick. I hope this helps.
