Chicken Primavera

4 small boneless skinless chicken breast halves (about 1 lb.)
1 Tbsp. oil
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Sharp Cheddar Cheese Sauce
2 cups frozen vegetable blend, thawed
1/2 tsp. garlic powder



COOK chicken in hot oil in large skillet on medium-high heat for 3 to 4 minutes on each side or until browned on both sides.
ADD 2-1/2 cups water and Macaroni. Bring to boil; cover. Reduce heat to medium-low; simmer 15 to 17 minutes or until macaroni is tender, stirring occasionally. (Do not drain.)
STIR in Cheese Sauce, vegetable blend and garlic powder; cook until heated through, stirring occasionally.

I got this one off Kraft Recipe site and have been making it for years it is great you can serve it with garlic bread and ice tea

Zucchini in Tomato sauce
4 zucchinis
Oil for frying
1-2 onions
4 large tomatoes cut into large chunks
Salt and pepper to taste

Chop onions and fry in a pot until soft
Add tomatoes, cover pot and letter simmer until it is reduced to a sauce
Add salt and pepper and stir well
Cut up zucchini into small pieces, add to sauce and mix well.
Simmer until zucchinis are soft but not mushy.

Shortcut: use a can of crush tomatoes instead of fresh tomatoes.
You can enrich it by melting yellow cheese or cottage cheese in the soup. Alternatively, you can add chopped meat when frying the onions for a heavier meal.
Serve with a good bread and a salad made of cucumbers and tomatoes cut very small, and dressed with fresh lemon juice, olive oil (or canola) and salt and pepper.

Leftovers! I spent the better part of yesterday making it all, so it's very worth reheating tonight. (Plus it's good!) Green chile pine nut meatballs on fettucine, mixed green salad with balsamic dressing and feta, and garlic bread.

Easy Monday dinner!

okay today is a late day so i need something that will cook fast...
Oodles and Noodles the shrimp flavor and i have some steamed shrimp in the refrigerator so i will put that in the noodles umm umm good

Left overs: Baked Pork chops and white rice. I did not have saltine crackers for the breading so I used croutons. Turned out pretty good if I say so myself :)
