Any good recipe entree ideas for a Halloween themed pot luck for the office birthday luncheon.

48-ounce cans tomato sauce
1/2cup cider vinegar
2tablespoons liquid smoke
4tablespoons Worcestershire sauce
1/2cup brown sugar
2teaspoons dry mustard
1clove of garlic
1teaspoon celery seed
2teaspoons chili powder
3pounds ground beef
12hamburger rolls
Melt the butter in a saucepan. Add the onion and peppers and sauté until wilted, about 5 minutes. Add all other ingredients, except for the ground beef, and cook for 15 minutes over low heat. In another pan, brown the ground beef. Drain and add to the sauce. Cook for 10 minutes. Serve on Moldy Rolls (recipe below).

Baked Rigaboney

Serves 8 to 10


3 tablespoons olive oil

2 large garlic cloves, finely chopped

1 large small onion, finely chopped

One (6-ounce) can tomato paste

Two (28-ounce) cans unpeeled crushed tomatoes in purée

1 teaspoon sugar

Coarse salt and freshly ground pepper

1 pound rigatoni

2 pounds sweet Italian sausage, casings removed

1 1/2 pounds whole-milk ricotta cheese

1 pound mozzarella cheese, shredded

1. Preheat oven to 350°. In a large saucepan, heat 2 tablespoons of oil over medium heat. Add garlic and onion, and cook until onion is translucent, about 4 minutes. Add tomato paste, and cook, stirring, 2 minutes. Stir in the tomatoes and sugar. Season with 1 tablespoon salt and 1 teaspoon pepper. Cook until slightly reduced, stirring occasionally, about 15 minutes.

2. Bring a large pot of salted water to a boil. Add rigatoni, and cook, stirring occasionally, 9 minutes. Drain in a colander, and rinse under cool water until cool. Set aside.

3. In a medium nonstick skillet, heat remaining tablespoon olive oil over medium heat. Add sausage, and cook, stirring frequently with a wooden spoon to break up any large pieces, until browned and cooked through, about 8 minutes. Drain, and set aside.

4. In a medium bowl, combine ricotta with half of the mozzarella. Stir to combine. Season with a pinch of salt and a pinch of pepper.

5. To assemble; Spread 1 cup of the sauce in the bottom of a 9-by-13-inch baking dish. Add half of the rigatoni in an even layer. Spread with 1/2 cup sauce, ricotta mixture, sausage, and 1 cup more sauce. Top with remaining rigatoni, and 1 1/2 cups sauce. Any remaining sauce may be reheated and served on the side or reserved for another use. Sprinkle the remaining mozzarella over the top to cover. Place baking dish on a baking sheet and transfer to oven. Bake until bubbly, 35 to 40 minutes.

8 cups apple cider
3 cinnamon sticks
1 tsp cloves
1 tsp lemon (or lime) juice

Heat in the microwave for a flavor treat that will knock your socks off!

butchered snake bits with bbq sauce

1 package (10oz) rigatoni pasta
2 cans squirtable cheese spread
1 small jar barbecue sauce
16 to 20 whole black peppercorns
1 carrot

Cook pasta according to directions on package. Rinse the pasta in cold water. To make snakes: Covering one end of the rigatoni with your finger (to prevent leakage), carefully fill each piece of pasta with cheese spread. Place six to eight cheese-filled rigatonis end to end on a serving platter, in a realistically curvy snake shape. Using a toothpick, spread lines of barbecue sauce along the top of each snake for markings. To form heads, use barbecue sauce to glue two black peppercorn eyes onto the end opposite the tail of each snake. Wash, dry and carefully peel skin off carrot. When completely clean of skin,make one more peeling for each snake you have formed. At the narrow end of each peel, carefully cut out a long, thin triangle. These are your snakes forked tongues. Position tongues

8 boneless skinless chicken breast halves (4 oz each)
1/2 cup egg substitute
2 tbsp plus 1/4 cup dry white wine or chicken broth, divided
5 tbsp lemon juice, divided
3 garlic cloves, minced
1/8 tsp hot pepper sauce
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/4 cup minced fresh parsley
1/2 tsp salt
3 tsp olive oil, divided
2 tbsp butter

Flatten chicken to 1/4-in thickness. In a shallow dish, combine the egg substitute, 2 tbsp wine or broth, 2 tbsp lemon juice, garlic and hot pepper sauce. in another shallow dish, combine the flour, Parmesan cheese, parsley and salt. Coat chicken with flour mixture, dip in egg substitute mixture, then coat again with flour mixture. (Hands get so dirty!)
In a large nonstick skillet; brown half of the chicken breasts in 1 1/2 tsp oil for 3-5 min on each side or until juices run clear. Remove chicken anc keep warm. Drain drippings. Repeat with remaining chicken and oil. Remove chicken and keep warm.
In the same pan, melt butter. Add the remaining wine or broth and lemon juice. Bring to a boil. Boil; uncovered, until reduced by a fourth. Drizzle over chicken

deviled mice

8 eggs 4 1/2 tablespoons mayonnaise
6 large lettuce leaves
16 pimento stuffed olives
1 tablespoon chocolate sprinkles

Hard boil the eggs. Gently crack the eggs against a hard surface, then carefully peel off the shells. Slice each egg in half lengthwise. Scoop out the yolks and put them in a small bowl. Mash the yolks with a fork until they are crumbly. Add mayonnaise and blend. Carefully fill the empty egg whites with yolk mixture. Cover a platter with lettuce leaves, setting a leaf or two aside for garnish. Arrange the egg halves, yolk side down, on the leaves. These are your mice bodies. To give them each eyes and a nose, pull the pimento out of an olive and cut it into three small pieces. Cut thirty two thin, lengthwise strips from several of the green olives. Stick two of these strips end to end onto the back end of the mouse to form the tail. Out of the remaining olives, cut thirty two small triangular ear pieces.

To garnish: Tear small pieces of lettuce and position in front of the mice's mouths. As a final touch, heap a pile of mouse droppings (chocolate sprinkles) on the platter to re-create an authentically tidy mouse toilette.

1 pkg. (8-serving size) JELL-O Brand Grape or Orange Flavor Gelatin Dessert 4 cups (1 qt.) cold prepared KOOL-AID Grape or Orange Flavor Soft Drink Mix

PREPARE gelatin as directed on package.
REFRIGERATE 4 hours or until firm.
BREAK gelatin into small flakes with fork. Spoon about 1/2 cup gelatin into each of 8 tall glasses. Pour 1/2 cup cold soft drink over gelatin in each glass. Serve immediately with a straw to sip gelatin pieces and soft drink.
VARIATIONS: Two Color Goo: Prepare grape and orange flavor gelatin as directed on package. Refrigerate and break into flakes as directed. Layer 1/4 cup orange gelatin flakes, 1/4 cup grape gelatin flakes and additional 1/4 cup orange gelatin flakes in each glass. Pour orange cold soft drink over gelatin in each glass.
FIZZY Goblin Goo: Just before serving, prepare KOOL-AID as directed, substituting cold seltzer for water
