Cous-Cous With Spicy Sausage

Ingredients

2 500 g packet cous-cous
100 ml oil
4 courgettes
2 aubergines
2 cauliflowers
1 lg red pepper
1 lg green pepper
1 cn chickpeas
2 lg onions
100 g roasted peanuts
1 tb chopped coriander
2 cn tomatoes
1 pk green chillies
3 cloves garlic
1 pk red kidney beans
6 kabanos sausages

Instructions

Pre-heat an oven to 130C.

Cut the onion into fine strips and fry for about twenty minutes or until they are crisp. Drain the oil from the onions into a large oven proof dish (you may need 2 dishes) and put the onions aside.
Prepare the cous-cous as directed on the packet but use a vegetable stock cube to add flavour. Pour the cous-cous into the dish or dishes and separate the cous-cous with a fork. Season well and place in the oven while you prepare the vegetables.

Heat some oil in a pan, pour in the chick peas and kidney beans. Chop the peppers and heat them through in a separate pan.

Slice the sausages and put them in with the beans and chickpeas and season. Cut the cauliflowers into small florets and the courgettes into small pieces.

Keep an eye on the peppers, beans and chickpeas etc. Check the cous-cous.

Finely chop some garlic and heat gently in a pan with some oil and finely chop two or three chillies. Throw them in with the garlic and sweat them off. Remove the beans, chickpeas and sausages from the heat, cover and put aside.
Once the chillies are soft, add the tinned tomatoes, bring to a gentle boil for five minutes and then simmer.
Dice the aubergine and heat through in a pan. Heat the cauliflower and courgettes through in another pan.
Once softened, combine all the vegetables with the beans, chickpeas and sausages in a large bowl.
Remove the cous-cous from the oven and combine it with the other ingredients.

Serve with the tomato sauce and garnish with chopped peanuts.

Warm Spinach Salad with Poached Eggs Frizzled Kabanos and Bacon
INGREDIENTS: *110 gm readywashed young leaf spinach
*1 few sprigs of watercress *4 large very fresh eggs *75 gm smoked kabanos sausage *4 rashers smoked back bacon or 8 streaky rashers *1 sm onion peeled *50 gm open mushrooms *2 slc white bread crusts removed *60 ml extra virgin olive oil *60 ml dry sherry *30 ml sherry vinegar freshly milled black pepper
Method:
You need to begin this by preparing everything in advance.
The onion mushrooms and bacon rashers need to be finely chopped into 5 mm pieces; the sausage should also be chopped but fractionally larger.
Then cut the bread into 5mm cubes (croutons) and arrange the spinach and watercress on two large plates removing any large stalky bits first.
Poach the eggs (qv) and while theyre sitting in the hot water take a mediumsized heavybased frying pan and heat 1 tablespoon of the oil in it until its very hot and gives off a fine haze.
Then fry the croutons tossing them around in the pan until theyre crisp and golden brown about 1 to 2 minutes and after that remove them to drain on some kitchen paper.
Add the rest of the oil to the pan and again let it get really hot before adding the prepared bacon onion and sausage.
Toss them all around keeping the heat high to make everything brown and toasted at the edges.
After 4 minutes add the chopped mushrooms and toss these around still keeping the heat high for about 2 minutes. Finally season with freshly milled black pepper add the sherry and sherry vinegar to the pan giving it a few seconds to bubble and reduce.
Then transfer the eggs to sit on top of the spinach and watercress pour the contents of the pan over everything and sprinkle the croutons on top.
Serves 2. Bon appetite.

I prefer both fruits and fruit and vegetables better, regardless how they look and taste. You desire a little of both.

In the event it's a fruit it includes seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.
