i usually use a oil&vineger salad dressing w/ kc masterpiece seasonings(good) but want something different

The only thing about a marinate with acid if it is a tender cut is you take some of the flavour away, I was a chef for 20 yrs and find spice and salt marinates work best, what I mean, like pork steaks take a spice and salt based marinated better, fresh garlic, hotter spices, like cayenne, thyme, chili powders, a scant amout of salt, as it does tend to draw out the moisture.

An one bit of advice, do not marinate for 2 long, this to can take a toll on the tenderness, lesser cuts can be made more tender with the addition of liquid, beer, red wine, oils and a light acid like tomato products.

this isnt exactly a marinade tip but... im not sure if you already knew this... if after you marinade and all that rub the steak both sides with a little bit of salt, like RUB it down. dont use to much because then it will just be to salty.. but salt naturally acts as a barrier for juice. and the juices will stay in the steak as it is cooked on the grill. It really works, we bought cheap *** steaks you would think would be dry but we did this and it really works , and this is now my only method.. Try not to use a marinade that has much sodium at all in it, because all the salt will not be good. But to bring out the natural meat flavor, just use a rub of salt and pepper.

For cuts of beef that are not too tender, to begin with:

Apple cider vinegar (a milder vinegar)
Soy sauce and/or worchestershire sauce

Put above solution into a sauce pan large enough to hold the steak in a flat position. Cover and put into refrigerator. After 30 minutes, turn steak over, to allow the other side to marinade, too.
(Can be left overnight, in fridge)

Note: If you use too much soy sauce as part of the marinade, it will cause the steak to pick up too much sodium chloride (salt)--unless you use a soy sauce that is lower in salt content.

It is better to use table salt (or kosher salt) as part of a "rub", just before you put your steaks on the grill, or for broiling or baking.
(Salt, pepper, onion powder, and fresh minced garlic...is a good "rub").

1 cup of soy sauce
1 Tbsp of Sesame seed oil
1/2 Tsp of black sesame seeds
1/2 cup vegitable oil
1 Tbsp Sugar
1 Tbsp crushed garlic
1/2 small onion chopped

You can vary the amounts to taste. Marinate for 30 minutes.
It is also good for chicken, but to marinate chicken you should marinate at least two hours.

Put the marinade in a sealable plastic bag, then add steak(s), and squish it around, and let sit on the counter or in fridge, turning and mixing it up several times.

The meat will come out soooo tender too.

my brother uses barbaque sauce, like diana sause, and marinates them in the oven on a really low temp for like an hour or two.

My uncle uses an italian dressing, with salt, pepper, a bit of oregano and lets them sit in the fridge for an hour or two...then grill them to perfection.

Either way, you could use your regular method, and then put more spices on it..or different spices...try basil, garlic, oregano, sage, thyme...anything you can get your hands on...it'll make it nice and flavourful!

try mine 1 cup of hot sauce(Tabasco green), 1 tbsp red wine vinegar, black pepper, garlic cloves diced, paprika, corn oil, fresh diced parsley, curry powder and old bay seasoning,

thaw meat and put above ingredients and meat in a plastic bag give a shake to coat and place in the fridge overnight. the vinegar will make tender and juicy

equal amount of tomato paste, vinegar, brown sugar and soy sauce, then add grated onion and garlic powder to taste. You can add some water if it will be sitting in it for while, and I also add some tabasco sauce. I personally just use some balsamic vinegar and black pepper--nothing else is needed, and my friend just uses red wine.

This is awesome: first, poke holes in your steak with a fork. Then make a rub out of salt, pepper, and garlic powder. Rub this into both sides of the steak, kind of mashing it in. Then, drizzle real maple syrup over it (on both sides if you can) and let it sit in fridge a couple hours or so. I then grill them. Dee-Lish!

Try soy sauce and Worcestershire sauce, with some fresh minced garlic and fresh ground pepper.

soy sauce, beer, sesame oil, sliced or diced jalapeno or serrano chili peppers, minced garlic and onion. marinate ribeye or similar well-marbled cuts for at least an hour or two, up to 8 hours. grill or broil till medium rare (or medium if you absolutely must).
