I like sponge cakes and find the ones I bake at home are too hard, don't rise very far and are rather dry. We use a fan oven and follow the standard Delia Smith approach rather than Gary Rhodes, because he recommends using too much sodium bicarbonate and cream of tartar.

I've never really cooked for more than 15-20 and usually that's like one dish. Now I need to do the whole thing for 50. The rice is a side dish so what quantity should I cook (preferrably in "cups" of dry rice.)

Hi All,

Greatly need some help over here.
Need to do up a vanilla based mango cake coming saturday.
And i figure out i could do a normal vanilla sponge cake, split them into half, and input the mango cubes in.

One problem. I cant seem to find any vanilla base recipe online.
Could anyone offer recipeee?
And also, Will there be any clashes in taste if i use the above method?

My aunt would like me to help make her dessert for friday and has provided the following ingredients:
jelly mix, swiss roll, custard, mixed fruit can, whipped cream, and creme anglais.

Do I place pieces of the swiss roll in a bowl, pour jelly on top and let it set, then place the fruit on top, and then custard, whipped cream, and decorate?

Please help! I've never made it before, just sort of guessed. Recipes online include alcohol and biscuits so am confused.
