To Defrost in the Microwave

Remove fish from package wrapping or cans. Wrap loosely in wax paper or place in microwave dish. Arrange loose pieces of fish in a single layer with thickest parts or largest pieces towards the outside. Process at "Defrost" half the allowable time (see table below). Turn over block OR separate or rearrange pieces. Defrost for second half of time.

If you do use your microwave set it on low, and go for no more than 30 seconds at a time. THE BEST METHOD for thawing fish is called flash thawing, it can take up to 15 minutes but will thaw it naturally and is aproved by the USDA methods of food preperation, first set the frozen fish in a collendar ( a big bowl with a bunch of holes in it- some people call it a strainer ). Next put it in the sink with cold water running over it. The water must not be hot, this will breed harmful bacteria that could make you and whoever else eats it very sick. The water doesnt have to be running full blast either, a steady stream about the width of a pencil will do. It does take twenty minutes or so, but you dont have to worry about tanting the fish, and you will keep all the natural flavors of the fish. This is the best method because you are not cooking the fish yet, with a microwave oven on low you are still cooking the fish, and microwaves tant the flavor, and can make the best fish taste like well rotten fishy fish!!! Try this, it is what we do in resturantes to thaw everything. It is what the USDA aproves and teaches in food handlers classes.

There is no need to defrost seafood before cooking. I've been a pro cook for 43 years, just stick it on the grill, or in a thick frying pan, squirt it with lemon juice, or water, and cover quickly on medium heat, it will thaw and cook in about 30 to 90 seconds, depending on the type of fish and the thickness. If you microwave it, it usually will make it overcook, and dry it out, unless you have a really awesome microwave machine. (You can also use white wine to squirt in the hot frying pan)

You can but the microwave often will cook part of the fish or all of it if left in their too long. It only takes about 6 minutes to thaw it under running cold water and it maintains a freshness that I think the mwave takes away.

Yes, but it will compromise the quality of the fish. Salmon is one fish that really is best thawed out slowly under refrigeration. Microwaving or even running under cool water will work but will more than likely give the meat a "gummy" texture ( it will kind of stick to your teeth while chewing). It is safe to thaw it those ways though but under no circumstance should you ever thaw Salmon out at room temperature. The bacteria count can go ballistic within a couple of hours. Enjoy your meal....

You can. Automatic settings suck anyway.
How long depends on the size of your fish (and on what setting you are defrosting). Let it run a few minutes and then feel the fish, if it's still frozen give it some more

I don't use the automatic settings for anything. You can do fish; use the same settings you would use for an equal weight of any other meat. As with zapping any frozen food, it is good to have some moisture on its surface when you put it in the microwave -- frozen water does not absorb microwave radiation nearly as well as liquid water.

I don't think it's a good idea since fish and seafood usually cook quickly unlike beef or poultry. When I thaw shrimp, I run it under cold water until it thaws and I would do the same with any other frozen fish or seafood or just put it in the fridge 2 days before cooking it.
