Ok, PLEASE help me. my husband has just told me i have to give him a dish to take to work tomorrow for his pot luck lunch, but here is the twist....it has to be a Celtic foodof some kind. Now it is too late to go out to shop, so anyone know of any simple things to throw together that i might have in my cupboard,that is yummy and Celtic?? thanks so much!

colcannon is celtic , thats just mashed potatoes and cabbage mixed up together , serve it with a pint of guiness

If he were mine, I'd tell him to get in the kitchen and start cooking! >:-[ That's a bit too short of notice, IMO!

But since haggis never goes over very well, try this:

Shortbread

1 Cup butter, room temp
1/2 Cup powdered sugar
3 C All Purpose flour
1 tsp vanilla
pinch salt

Whisk dry ingredients well. Beat butter and vanilla until fluffy. Add dry ingredients to butter. Mix just until combined. Press or roll out to about 3/8" thick, and cut into small squares or use simple cookie cutter. ***** a few holes in each, or use the tines of a fork. Place on parchment paper. Dust tops w/ a bit of granulated sugar to make them sparkle. Bake at 325ºF for approx. 15 mins or til golden brown. about 3 dz. Cool on racks; store room temp in airtight container.
