here are some salad recipes first:

*** bean or choli salad:

2 cups boiled dry choli or kidney beans
1 large onion chopped finely
2 small tomatoes diced
2 green chillies chopped
1 sprig of corriander chopped finely
lemon juice
salt to taste

mix all the ingridients in a large bowl. let it chill in the fridge. toss in the tomatoes only when ur about to eat the salad in order to keep it from getting soggy. serve after the salad is nice and cold.

***paneer salad:

2 bowls paneer cut into small bite sized cubes of equal size.
1 large onion chopped finely
1 small capsicum diced
1 teaspoon oil
3 tablespoon heinz ketchup
1 teaspoon chilli sauce
1/2 teaspoon mustard sauce (to add a zing!) (optional)
corriander to garnish

saute the onions and capsicums lightly in the oil for just oer a min. do not let the onions turn brown. toss in the paneer and stir in the sauces. mix thoroughly and garnish with coriander before serving

here's one more

***corn salad!

3cups boiled corn grains
1 boiled potato diced into small cubes
1 tomato deseeded and diced into small cubes
2 green chillies chopped finely
1 small onion chopped finely
1 bunch of fresh corriander
1/2 cup of ready made fried sev (haldi ram sev will work too)
2 tablespoon lemon juice
salt to taste

saute the onions in very little oil until they turn transperant. turn off the flame. mix all the ingredients except sev. let it chill in the fridge. garnish with sev before serving. (mix in the sev lightly only before serving in order to prevent it from getting soggy)
pasta salad:

***pasta salad

3 cups of pasta al dente
1 cup of capsicum (all colors red, green and yellow)
1 tbsp oregano
5-7 tbsp shredded cheese
2 teaspoon lemon juice
2 teaspoon olive oil
salt to taste

saute the capsicums in olive oil for 2 min. dont over do it. they should remain crisp. add oregano and saute some more. add the pasta and mix thoroughly. put the shredded cheese inside until it melts into the pasta. turn off the heat. add the lemon juice and salt as per taste. serve hot or cold. either ways it shall taste fab.

instead of the 3 colored capsicum u can substitute blanched carrots, french beans and just yellow capsicums. this way u'll add varitety and color to the salad as well.

***here's a tasty dip recipe which is extremely easy to make :

2 cups of curd
1 small onion chopped finely
1 green chilli chopped finely
5-6stems of corriander chopped finely
salt to taste

hang 2 cups of curd in a soft muslin cloth until all the water drains out. whisk the curd until it becomes creamy. add onion, salt, green chillies and corriander to it and whisk some more. let it chill in the fridge for an hour.

serve with monaco biscuits or sliced cucumbers and carrots.


***here's an easy way to make pizza without an oven:

lightly roast ready made crusts in the non stick pan or tawa until they turn golden brown. (one side or either side as per ur liking)

remove the crust from the pan and spread pizza sauce over the crust (ragu is the best) or u can make it at home. top it with ur choice of ingredients: onions, capsicums, tomatoes, paneer, chicken, pepperoni, sweet corn, baked beans, sausages are some common toppings. grate mozzarella cheese on top and put the crust in the non stick pan again. cover the pan with a lid and cook on extremely low heat until the cheese begins to melt. keep checking often so that u dont burn the crust.


***here's an easy recipe to make biryani:

Basmati Rice 1 cup
Onions medium size 1 No cut lengthwise
Tomatoes Big 1 No cut lengthwise
Carrots 1/4 cup cut into matchsticks
French Beans 1/4 cup cut lengthwise
Peas 1/4 cup
Potato Big 1 No cut lengthwise
Ginger-garlic paste 1 tbsp
Pudina(Fresh Mint) 1/2 of small Bunch
Coriander Leaves 1/2 of small Bunch
Yogurt 1/4 cup
salt & chilli powder Acc to taste.
corriander Powder 1 Tbsp.
lemon Juice 1 Tbsp
Oil 2 Tbsp
Saffron(optional) few strands soaked in warm milk.

Method:
Cook Rice seperately & Cool.
Wash All the veges except Onions & tomatoes.
Marinate the same with Yogurt & ginger-garlic paste
for about an hour.

Heat a fry-pan with Oil , add Onions & fry till translucent.
Add tomatoes, salt & fry till it leaves all the juices.
Add Mint, coriander leaves & cook nicely.

Pour in the marinated mixture,& mix with chili & dhania
Powder.

Cover & cook in low steam till all the veges are tender.
Mix in lemon juice & fry till the moisture is absorbed.
Add Saffron , rice & mix gently .Adjust the seasoning.

Cover & let it sit for a few minutes before serving.

If having an Oven facility Bake the rice in the oven for 30
minuts before serving. Garnish with a few pieces of raisins and fired cashewnuts (optional). Serve hot with plain yogurt.

incase u want to make it a non-veg preparation u can substitute the vegetables with boiled and marinated chicken or lamb pieces too.


The above recipes are extremely easy to make. so have fun cooking and experimenting with them.

Subject: Tandoori chicken - a simple recipe
chicken maryland skinned and cut in 3 pieces - about 10
or about 12 drumsticks
make 3 to 4 deep cuts in the chicken pieces and smear with lime juice and salt and leave aside for 15 minutes.
In a large flat tray, put
ground garlic - 1 teaspoon
ground ginger - 1/2 teaspoon
coriander powder - 3 teaspoons
chilli powder - 1 teaspoon
cummin powder - 1/2 teaspoon
Plain yogurt - 3 to 4 tablespoons
salt to taste
tandoori colour optional
Mix all of the above ingredients well in the yogurt.
Put the readied chicken in the tray with the yogurt, mix well and allow to marinate overnight.
Grill the chicken pieces in a hot grill till well done.
You have to brush lightly with oil on both sides of chicken & turn it every 10 minutes or so.
Serve with lemon wedges, onion raitha and chappatis / lebanese bread / pita bread
Great as a starter when done with chicken wings (unskinned)

SIMPLE MACARONI CHEESE

1pt Milk,
50g butter,
50g Plain Flour,
200g Macaroni pasta,
150g Cheddar cheese,
50g Red leicester Cheese to top.

Put water to boil, when boilt add pasta. Melt butter in a saucepan, add flour and stir to a roux (paste). Take the roux of the heat and gradually add milk stirring all the time so not to go lumpy. Put pan back on a high heat and stir until sauce has thickened. Remove once again from heat and add Cheddar cheese. Stir until cheese has melted. Drain Macaroni and put into a casserole dish. Pour the cheese sauce on top and sprinkle with the Red Leicester Cheese. Place under a hot grill and wait until the cheese has turned brown. Remove and eat when slightly cooled

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

<<<<< Salmon Cutlets with Pineapple Salsa >>>>>> (Serves 4)

4 Salmon cutlets, cut 2.5 cm in thick
pepper + salt

1) Preheat barbecue (oven) to a medium heat.
2) Sprinkle salt and pepper on Salmon cutlets
3) Cook salmon cutlets on lightly oiled barbecue grill for 3-5 minutes each side or until flesh flakes when tested with a fork.

Pineapple salsa
160 g fresh pineapple, roughly chopped
2 spring onions, finely chopped
1 fresh red chili, seeded and finely chopped
2 tablespoon lemon juice
2 tablespoons finely chopped fresh mint

Put all the ingredients in a food processor or blender and process to combine. Serve at room temperature with salmon cutlets & boiled vegetables

Grilled Chicken Wings >>>>>>>>>>>>>

800 g Chicken wings
1 clove of garlic (crushed)
2 slices of fresh ginger (crushed)
2 tablespoon of honey mix with water

Marinade:
5 tablespoon of soy sauce
2 tablespoon of cooking wine
3 teaspoon of sugar
2 teaspoon of cornstarch

Mix the chicken wings, garlic, ginger with the marinade, marinate in the refrigerator overnight or at least 2 hours.

Pre-heat the oven 180 degree C, bake the chicken wings for about 20 mins or until golden on all sides (turn occasionally). Reduce heat to 100 degree C, brush honey water over the chicken wings and bake for 5 mins. Serve with garden green salad / potato salad / spaghetti or steamed rice.

2 ripe firm pears, cored
lemon juice
1 red oak leaf lettuce or other red lettuce (coral or mignonette), leaves separated
1/3 cup unsalted walnut halves
2 tablespoons crumbled low-fat ricotta cheese

Red Wine Pear Dressing
1 canned or blanched fresh pear, with 1 tablespoon liquid reserved
2 tablespoons red wine or balsamic vinegar
1 teaspoon freshly ground black pepper

1) To make dressing, place pear and liquid vinegar and black pepper in a blender. Puree.
2) Cut each pear into eight segments. Place in a bowl and add lemon juice. Toss to coat (this helps prevent the pears from browning).
3) Arrange lettuce on a serving platter. Top with pears. Drizzle with dressing. Scatter with walnuts and cheese.

How about vermecilli ??
Boil vermecilli.Remove excess water.Keep it aside.
In a pan, take some oil,Add garlic,ginger,chopped onions.Saute them for a while.Add chopped green chillies and chopped tomatoes.Cook them for a while.
Then add chopped vegetables of your choice.Add water and bit of salt. Cook them for a while.After they are done,add masala like chilly powder,turmeric powder,bit of garam masala etc.Add the boiled vermecillli to it.Add salt according to your taste. Mix well.Enjoy.

i always favour vege enchiladas. im a very poor cook and i burn almost everything! all you do is heat a bit of oil in a pan, add onions and garlic. then add peppers, kidney beans, sweetcorn and mushrooms and add some prepacked enchilada powder mix. then you buy wraps and fill them with the mix, stick it under the gril until it goes golden brown, top with soured cream, cheese and jalapeno peppers and you're done!

meatloaf- 1 lb hamburger, 1 egg, crackers, ketchup mix together add salt and pepper, garlic other spices, bake at 350 until done in the middle.

same for meatballs- roll into balls bake at 350 add into sauce and let them sit for a minute and serve with spaghetti. or make meatball subs.

Cook macaroni in boiling water. Drain. Put cooked macaroni into a bowl. Add grated cheese. Put in microwave for two minutes. To spice it up add salsa.
