OK. I'm one of those weird Texans that like beans in my chili. So, with that said, here is my really easy chili recipe. I am not claiming it as homemade.

2 pounds of ground beef
2 Tbs of dried onion flakes
1 large can of Ranch Style beans
1 can of Wolf Brand Chili w/ beans

Brown the ground beef. Drain well. Add everything else and simmer till heated through.
You may want to add a little water for consistency.
Goes great with biscuits.

My chili never comes out the same. I just throw in whatever I have, in whatever quantities seems right. Here's generally what I use:

canned tomatoes
can of tomato sauce
ground beef, or leftover roast, or leftover chicken or all three
couple cans of beans (kidney, garbanzo, pinto, chili beans, mix & match!)
Onions cut up
Celery, green pepper, red bell pepper (all three, sometimes none!)
Chili powder (from 1 to 4 Tablespoons, sometimes more after tasting)
Cumin (sprinkle a little in)
Minced garlic & Tabasco sauce (as much or little as you'd like)

Throw it all in a crockpot and cook all day, or just simmer on the stove for a couple hours.

Chili Recipe
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 4 hours 20 minutes
Yield: 8 to 10 servings

1 pound mixed ground beef and sausage, browned and drained
1 medium onion, diced
1 green bell pepper diced
2 cups chopped celery
2 (28-ounce) cans diced tomatoes
1 (28-ounce) can whole, peeled tomatoes
Ground cumin
Chili powder
1 (14 1/2-ounce) can pinto beans, drained and rinsed
1 (14 1/2-ounce) can black beans, drained and rinsed
1 (14 1/2-ounce) can kidney beans, drained and rinsed
1 package chili seasoning mix
Shredded cheddar, sour cream, chopped green onions, for garnish

In a skillet brown ground beef and sausage, drain and set aside.
Spray large pot with nonstick cooking spray and heat over medium heat. Add the onion, green pepper, and celery and saute briefly. Stir in the diced and whole tomatoes. Add cumin and chili powder, to taste, and cook for about 8 minutes or until vegetables are tender. Add the beans, browned meat, and chili seasoning. Partially cover, and let simmer for 4 hours.
Serve with Cheddar cheese, sour cream, and green onions.

Hi;
brown 3 lbs of ground beef in large skillet on stove. Don't break it up into small pieces.
drain your meat and put in large crockpot. add:
1 onion chopped
2 8 oz pkg sliced mushrooms
1 can chili beans in gravy-(I like Brooks brand)
2 29 oz size cans of tomato sauce
1 chopped jalapeno fresh
chili powder to taste (I use at least 4 TBSP)
4 TBSP masa flour
1/2 cup beer
salt and pepper to taste and a little hot sauce too.
Stir as best you can to combine. Put your crockpot on high and let this cook and stir it around every so often. This needs to cook on high at least 4 hours. But it is easy and very good.
