Mayonnaise Cake
Mayonnaise makes this cake nice and moist.
Original recipe yield: 2 -8 or 9 inch layers.
INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

Bittersweet Chocolate Cake:
8 ounces bittersweet or semisweet chocolate (at least 70 percent cocoa), coarsely chopped
6 tablespoons unsalted butter (3/4 stick)
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
2 teaspoons vanilla extract
1/2 cup sugar
1 to 2 teaspoons cocoa powder (preferably infused with a vanilla bean)
Position rack in middle of oven. Preheat oven to 350° F. Rub the inside of an 8-inch cake pan or springform pan with butter. Swirl flour around to coat the pan, then tap out the excess. Combine the chocolate and butter in the top of a double boiler over simmering water. Stir occasionally until the chocolate is melted. Set aside to cool. Meanwhile, sift the flour, baking powder, and salt into a bowl. Whisk together and set aside. Combine the eggs and vanilla extract in a large bowl, then whisk until foamy. Add the sugar and whisk about 1 minute or until light and frothy. Blend in the chocolate mixture. Add the flour mixture in 2 batches, whisking to blend completely each time. Pour the batter into the prepared pan. Bake 22 to 25 minutes or until a skewer inserted 1 inch from the edge comes out clean. (When the skewer is inserted in the center, a bit of moist batter should cling to it.) Cool the cake on a rack for 10 minutes, then invert onto a plate. Invert back onto rack so the shiny side is up. Cool the cake completely before sliding it onto a serving plate. Sift the cocoa over the top.
Yield: Makes one 8-inch cake (8 servings)

Actually it is much easier to just go and buy a Betty Crocker or Duncan Hines Mix. Most of the time you just have to add eggs, milk or water.
Buy a ready made cream chocolate frosting in a plastic tub. Spread it on the cake after the cake has cooled with a butter knife. Put m&m's on top of the frosting after it has been spread on the cake. This is what I like to do for fun.

Ok, I think that you should use Betty Crocker cake mix to make something really special. Go to http://www.bettycrocker.com to get more recipes, but I will give you some starting recipes so you get the drift. By the way, I believe that your girlfriend will feel on top of the world that you went through so much trouble for her.
Molten Chocolate Mini Cakes
Known also as "lava cakes," molten cakes are the answer to the most decadent chocolate craving. Here's an easy version using cake mix.
1/2 cup whipping cream
1 cup semisweet chocolate chips
1 box Betty Crocker® SuperMoist® devil's food cake mix
1 cup water
1/3 cup vegetable oil
3 eggs
1 container Betty Crocker® Rich & Creamy chocolate frosting
Powdered sugar
Sliced strawberries
1 . In 1-quart saucepan, heat whipping cream over medium-high heat until hot but not boiling. Stir in chocolate chips until melted and mixture is smooth. Refrigerate about 1 hour, stirring occasionally, until thick.
2 . Heat oven to 350°F (325°F for dark or nonstick pans). Grease and flour or spray with baking spray with flour 18 (2 3/4x1 1/4-inch) muffin cups. In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl constantly. Place 1/4 cup batter in each muffin cup. Spoon 1 tablespoon cold chocolate mixture on top of batter in center of each cup.
3 . Bake 18 to 22 minutes or until top springs back when lightly touched. Cool 1 minute. Carefully remove from pan; place on parchment paper. Cool 10 minutes. Frost with chocolate frosting. Just before serving, dust with powdered sugar. Garnish with strawberry slices. Serve warm.

OK, I don't know if you will like my advice, and I know some people gave you choices similar to what I am going to say, but I am going to give you reasons why you should or shouldn't choose one or the other....feeling guilty b/c you didn't make it, really in my opinion, shouldn't be a reason, if you are running short of time or something, mainly due to you being a novice cook, ~first breathe~....I used to love to cook...that is what I used to do for a living....many, many yrs. and I always made everything from scratch...Now I do do good to make a box mix.....disabilities now after 2 car accidents.... It is so much easier to buy a cake...you don't have to tell them you make it and lie...unless you feel you need to....even if it suppose to be homemade.....doesn't mean it has to be homemade....Tell them time was running short...and so you had to buy one, if you want...but I wouldn't be panicing over a cake.......I know I used to in the past...but life is much too short to worry about these small things....Good Luck....

honestly, if your not a very good cook, your best bet is to just buy a cake mix and make it, that way all you have to do is add in the water, and maybe an egg and some oil, and pour it into a pan and cook it.

buy a sponge cake and cover it with hersheys chocolate syrup or buy some chocolate fudge and spread over the cake......your chocolate cake is done.
