My Lazy Day Peanut Butter Cookies:
2 cups of Peanut butter
2 eggs
2 cups of white sugar
2 teaspoons of vanilla
Cream eggs and butter add the rest.
Scoop out with a small ice cream scoop or tablespoon
put on cookie sheet 1 inch apart or more if the cookies are bigger
bake at 375 unit brown around edges, careful they burn quick
It is hard to say exactly how long, because everyone has a different stove and baking altitude in Denver I do them for 7 to 9 minutes.
Let them cool and remove, YUMMY

Soft Chocolate Chip Cookies
INGREDIENTS:
•4 1/2 cups all-purpose flour
•2 teaspoons baking soda
•2 cups butter, softened
•1 1/2 cups packed brown sugar
•1/2 cup white sugar
•2 (3.4 ounce) packages instant vanilla pudding mix
•4 eggs
•2 teaspoons vanilla extract
•4 cups semisweet chocolate chips
•2 cups chopped walnuts (optional)

DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2.In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3.Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Prep: 30 min., Bake: 14 min. per batch
3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 cup semisweet chocolate morsels
1 cup almond toffee bits
1/2 cup slivered toasted almonds
Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.
Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels, toffee bits, and almonds. Drop by tablespoonfuls onto lightly greased baking sheets.
Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.
Yield: Makes about 5 dozen

This is awesome, it make these for my Dad when he is crabby. It is like the only thing that puts an instant smile on his face. Do this- get Pillsbury chocolate chunk cookies in the tube & spoon them into a muffin tins, lightly spray w/no stick spray, bake. That is it, so easy, they are so good, perfectly round, thick, chewy cookies. My Dad seriously keeps thinking they are homade because they taste so good being baked in the muffin tins.

Chocolate-Dipped Coconut Macaroons
1 pkg. (14 oz.) BAKER'S ANGEL FLAKE Coconut (5-1/3 cups)
2/3 cup sugar
6 Tbsp. flour
1/4 tsp. salt
4 egg whites, lightly beaten
1 tsp. almond extract
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate, melted
PREHEAT oven to 325°F. Mix coconut, sugar, flour and salt in large bowl until well blended. Add egg whites and almond extract; mix well. Drop by tablespoonfuls, 2 inches apart, onto greased and floured baking sheets.
BAKE 20 min. or until edges of cookies are golden brown. Immediately remove from baking sheets to wire racks. Cool completely.
DIP cookies halfway into melted chocolate. Let stand at room temperature or refrigerate on wax paper-lined tray 30 min. or until chocolate is firm.
