I live alone. I'd like to make pinhead oatmeal in my slow cooker overnight, but it won't work on too small a quantity. So what should I do with the left-overs?

I am cooking dinner tomorrow night for my fiance's parents, his brother, and his brothers girldfriend.

I am planning on making stuffed bell peppers. She is not fond of red meat, but not a vegeterian. But I thought I would make one meat free for her.

Inside the pepper is going to be:
ground beef
rice
tomato sauce
parmesean cheese
spices

What should I replace the ground beef with for the veggie one?

I was thinking some kind of bean?
I'm kind of leaning away from pinto or black just because they will be covered with more tomato sauce and cheese, and I think mexican food when I think of black or pinto beans.
So anyway, I am thinking kidney beans might be a good choice.

What do you all think? Do you have any good ideas?

Thanks!!

I make the usual butternut squash soup (includes roasted butternut squash, carrots, onions, chicken stock).

I want to make butternut squash soup but I want to make it more unique. Any suggestions?

(No dairy products like cream, milk, cheese because of lactose intolerance among some family members)
