I am cooking dinner tomorrow night for my fiance's parents, his brother, and his brothers girldfriend.

I am planning on making stuffed bell peppers. She is not fond of red meat, but not a vegeterian. But I thought I would make one meat free for her.

Inside the pepper is going to be:
ground beef
rice
tomato sauce
parmesean cheese
spices

What should I replace the ground beef with for the veggie one?

I was thinking some kind of bean?
I'm kind of leaning away from pinto or black just because they will be covered with more tomato sauce and cheese, and I think mexican food when I think of black or pinto beans.
So anyway, I am thinking kidney beans might be a good choice.

What do you all think? Do you have any good ideas?

Oh and I have never cooked tofu before and I always like to do a test run with things I have never cooked before. So we'll just save that for another time when I have more time to prepare.

Portobello mushrooms would be good!! They are meaty and taste great. But they have a lot of water in them. Not sure if you would have to cook them before stuffing them into the pepper. If you are going to use beans try cannellini beans. They would go well with your tomato sauce and parm cheese.

Definatly try ground turkey! It holds in flavor much better and works really good with the ingredients when seasoned. Plus, its very hard to tell the difference texture wise. If you dont want to use any meat at all try SMART (meatless). Its like a substitute for meat. If you want to use beans i recommend kidney beans or refried beans. They both work. You could also use other vegetables that have texture that is somewhat alike to ground beef such as mushrooms or corn you can just add extra mixed vegetables in place of the meat.

You could try using mushrooms instead of meat. I did that with some stuffed peppers, and they were delicious.

And yes, kidney beans are a good choice since you don't want pinto or black.

are two good options that are available in most supermarkets.

The Boca Ground Burger is frozen and I feel it browns up quicker in the pan than the Gimme Lean but I prefer the flavor of the Gimme Lean better. They are both good, but if you opt for the Gimme Lean, start it on medium heat in a non-stick skillet and break it apart into small chunks as it cooks. Then once it is broken up and mostly cooked, turn the heat up a bit to caramelize it slightly. (Adds flavor)

When I was a kid, my mom actually used to make a really delicious vegetarian stuffed pepper in which she used refried beans and corn. Again, this may remind you of Mexican food, but it really isn't, and it's good!

I'd use fava beans, corn and rice... that would be yummy.
