I'd go with Apple Galette. It's a rustic pastry that is nice enough to be special.
Apple Galette
Pastry:
1 stick Butter (unsalted)
1 cup Flour
Cut Butter into the Flour until it's like cornmeal. Add just a little water to bring the dough together. Pat out into a disk and cover tightly with plastic wrap. Refrigerate ~ 1 hour. Roll out a bit larger than your cookie sheet or pizza pan. Refrigerate ~1 hour again.
Filling:
Apples (usually 3 - 4 large apples peeled, cored, & sliced)
Cinnamon (a generous teaspoon)
Sugar (several tablespoons)
Butter (optional)
Slice Apples and put in a single or double layer (depending on thickness of the apples) onto dough leaving about 1 1/2 inches around the edges. Sprinkle apples with Sugar and Cinnamon and dot with Butter (if using). Bake at 400 degrees (yes, 400 degrees) for ~ 1 hour (yes, 1 hour).
Glaze
1/2 cup Apple Jelly
1 Tbsp. Water (or Apple Cider or Brandy)
Melt Apple Jelly with Water (or Apple Cider or Brandy). Brush melted jelly over top of pastry and apples while still hot from the oven.
Enjoy!
This recipe also works with Peaches, Pears, etc. (but generally not with berries)
You can trim the edges of the pastry for a more finished look or leave untrimmed for a rustic look.
The glaze really makes this dessert special both in looks and in flavor.

Well pastry to me is the dough part of the combination...here is a super easy way to get s fast result. Brown the slices in real sugar and Cinnamon until caramelized....Use canned HUNgr_ Jack Flaky biscuits separated and dipped in real butter warmed. with Brown sugar and all spice on biscuit will make about 3 roll ups...put a section of the apple in each one and roll up push a toothpick into the top to hold it together . BROIL for 7 min @ 550 or until the sugar on the pastry bubbles ...remove and let cool ..Add whipped cream just prior to serving...My grandmother called these "grandpas mustache",,,,from the E..

puff pastry... lay it out, put in the sliced apples, sprinkle with cinnamon & sugar and dot with some butter. Pull the edges of the puff pastry up around the apples and bake till golden brown at 350 degrees for about 40 mins.

Apple Strudel!
Recipe for Apple Strudel
Serves 8 as dessert or 4 as a maindish
For the dough:
2 cups wheat flour, all purpose
1 whole egg
1/4 cup oil
1 tablespoon white wine vinegar
1 cup lukewarm water (*)
Salt, flour to work with
For the filling:
2 lb apples
1/2 cup sugar
1/2 cup raisins
1/2 cup sweet crumbs
1 lemon (juice and rind)
cinnamon ground, austrian rum (or essence)
1/2 cup butter melted
1/2 cup milk

Apple pie is always good but takes a lot of apples - if you only have one or two you could try making an apple tart instead (like a pie, only smaller!). Apple crumble or apple crisp is also a very tasty and simple recipe using apple, and if you want to get more into the idea, you can make apple muffins! All of these recipes are available online at places like foodnetwork.com, all you need to do is search.

If you know how to use phyllo (fee-lo not fi -lo )
dough just make an apple strudel.
While not a pastry per se a classic Apple Tarte Tatin is an excellent dessert that presents well

A (not sure of the spelling) Gadette looks pretty good, saw one in Sunset magazine. It is very simple French pastry.

Phillo dough and make a tart. Apple crumble is good. Apple crisp, apple bread, fried apple pies.
