First season it with salt & pepper. Put a layer of spinach and a layer of mozz covering the entire london broil. Roll it up and tie it with kitchen twine. In a very hot pan with a little olive oil sear all sides of the london broil and finish it off in the oven. Let it rest for about 10 minutes before you cut so the juices can redistribute, otherwise all the juice will just run out onto your plate.
